Spicy wings with blue cheese sauce

Method

  1. Cut the tips off the chicken wings then cut in half at the joint. Marinate for an hour in the melted butter, 4 tbsp hot pepper sauce, the paprika and celery salt. Heat the oven to 200C/fan 180C/gas 6. Put wings on a rack and cook for 40 minutes.
  2. Mash the crumbled blue cheese, soured cream, mayonnaise and a splash of water. Serve with the wings for dipping.

    Try using Frank's RedHot Sauce...great flavour and a nice kick of heat!

    Tried Franks Hot Sauce and I find it has too much vinegar. Am on the hunt for a good recipe with heat but not so sharpe.

    Franks red-hot is king. Just add more butter(sorry) to take the vinegar edge down a bit.
