Prawn laksa

A spicy, low gi supper with prawns, ready in just 20 minutes

Method

  1. Put the noodles in a bowl, pour over boiling water and leave to soften, about 5-7 minutes.
  2. Heat a pan, add the laksa paste and a splash of coconut milk. Fry for 3-4 minutes, add the coconut milk and stock, stir, and simmer for 2 minutes. Add the prawns and heat through. Stir in the beansprouts. Put the noodles in two bowls, ladle soup over, and top with cucumber and coriander.

    This is a simple but flavoursome recipe. It is now one of my favourite dishes to cook, I cook it at least once a week. It tastes better then the laksa you can buy from a restaurant and you can vary the intensity of the heat depending on your mood by adding an extra spoonful of laksa paste. Thumbs up! :)

    Could not find laksa paste, so used a small amount of green thai curry paste. Tasted great. Served it with homemade naan bread which went very well. Really quick and easy to prepare and cook.

    I have made Vegetarian Laksa for a friend not too long ago with bean curds or quorn, potatoes, french bean, beansprouts and thick rice noodles. Laksa paste like red curry paste or green curry paste can be bought from good Oriental supermarket. It is nothing better than making your own paste...

    I love this recipe! I make a few changes and subsitutions which others might like to try: I used Yeos Laksa paste - probably 3-4 teaspoons - find it a bit mild so also added crushed chilli flakes. I also used mangetout instead of bean sprouts and added a frozen vege mix with baby carrots / peas / broccoli and corn. Plus I use Tofu instead of and sometimes as well as prawns. Give my version a try you'll love it! Yuuuuuuuuuuuuuuuuuuuuum!!!!!!!!!

    Thanks for your help people! I made this using red thai curry paste and Im glad I did. It was yummy. looked a bit too watery at first but it turned out to be fine. will definately be making again. I added extra paste as we like it hot and it cleared up my cold almost instantly!

    Delicious! I added some fresh lime juice at the end, and a chilli to the laksa paste and coconut milk (which you can now buy in Tescos ethnic aisle by the way :o)...and some crushed peanuts at the end! Was really lovely. Will be doing again!

    This was lovely and will definitely make again. I couldn't find laksa paste anywhere I made my own from the flwg website uktv.co.uk/food/recipe/aid/514346. Also couldn't find shrimp paste so improvised with anchovy paste and fish sauce.

    I used half and half red and yellow curry paste and my tiny supermarket didn't have any bean sprouts so I added some green beans and sliced mushrooms. Absolutely delicious.

  • 2-3 tbsp laksa paste
  • 400ml tin half-fat coconut milk
  • 500ml chicken stock
  • 150g cooked large prawns , from a sustainable source
  • a handful beansprouts
  • ¼ cucumber , seeds removed and cut into strips
  • a small bunch coriander
