Sweetcorn pancakes with avocado salad

Try these simple little pancakes for a quick, low-fat weeknight supper, or as an easy starter

Method

  1. Whisk together the flour, baking powder, egg and milk and season well. Stir in the sweetcorn and half the spring onion. Mix the rest of the spring onions with the avocado, tomatoes and cucumber. Heat a non-stick pan with 2 tsp oil and cook spoonfuls of the batter until golden. Turn over and cook the other side. Put 3-4 pancakes on a plate and serve the avocado salad on top.

    This is very similar to a recipe Bill Granger did on Bills Food on BBC1. Have to say I tried both and his is so much better. This is not bad however and easy to make.

    These were okay, I think that my batter was too thick tho......the pan I used wasn't really up to scratch either... will try again

    These were only ok. I made them for my boyfriend and he wasn't very impressed and said they were too gooey inside and needed to be crispier. I tried again but it's impossible to get them crisp as the sweetcorn makes the batter too thick! Probably wouldn't bother again.

    Had real problems cooking these. Outside scorched whilst inside stayed gooey. Tried a variety of temperatures and times and couldn't get them consistent.

    Yum! I mixed in a grated courgette which was delicious. With regards to cooking I had them on quite low and fried them gently for about 10 minutes.

    These were absolutely fantastic. I had no problem cooking them and were a big hit. I added some fresh chilli to the batter for a slightly spicier version. They were a big hit with everyone.

    I made these according to the recipe, and they turned out really well. They were good with Tabasco sauce. The only problem I really encountered was that I couldn't get the flipped side to brown all the way, because the sweet corn was thicker than the batter. The tips of the sweet corn browned, but the bulk of that side didn't. I ended up frying them gently and with the lid on for all-over browning. I think next time I'd add cheese to the batter, and in general would experiment with other add-ins. Courgette sounds lovely.

    We added a dash of avocado oil to the salad as well as some crushed salt and pepper and served it on top of the pancakes. This seemed to compliment the pancakes quite nicely. Not too bad

    Made these for lunch today and they were very bland. Might try again and add some coriander. Made sure I flattened mixture while cooking them and they seemed to cook all the way through.

    These were really tasty. I added coriander and dried, crushed chilli to give a bit more flavour and it worked. They could still do with a little something but they were good. I flattened them once I'd put the spoonfuls into the pan and cooked them on a lower heat for much longer, which worked well.
