Mushroom & brown basmati pilaf

Banish all those negative thoughts about brown rice, this low fat dish is packed with flavour

Method

  1. Fry the garlic, onion and mushrooms in the butter for 5 minutes. Add the rice, stock and cardamon, cover and simmer for 25 minutes or until the stock is absorbed and the rice is tender.
  2. Mix the yogurt with chives to serve.

    Made my own variation of it and I was surprised how much I loved it. Wanted a rice dish and had some mushrooms that needed to be used ... came out with this easy delicious dish. One of my favorites now.

    Cheap and tasty. It kept well too in the fridge: I had it for tea four nights running! I think the cardamom makes this - don't be tempted to leave it out. I followed the recipe as above and didn't think it needed any amendments.

    Really lovely. On first reading the ingredients I wondered if I ought to add a bit more to it to make it more flavoursome. However, I stuck to the recipe (although mine needed more stock and I had no chives) and it came out really tasty. Will definitely do again, possibly served with a poached egg or some grilled chicken to make more substantial.
