Lemon self-saucing pudding

Method

  1. Heat the oven to 180C/fan 160/gas gas 4. Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter. Whisk the egg whites until firm but not stiff, and fold the two mixtures together.
  2. Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water. Bake for 45-50 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.

    Tried this, tasted delicious,but far too runny, the lemon sauce was almost like water and very little topping, what did I do wrong? Would love to try it again, any suggestions?

    This was absolutely delicious. Made double portion in a big bowl which created lots of sauce - I would use a more shallow dish next time. Very simple to do.

    This pudding is out of this world... an absolute MUST for citrus fans! It is extremely tart, which I love; although I can appreciate that those who find lemons a bit too sour for their palette may want to "dilute"/sweeten with OJ instead of 100% lemon juice. I made this recipe for a dinner party and it was simple enough to mix up the batter just before serving main course. I divided it up into 6 buttered ramekin dishes so that when they were done everyone had their own little pudding. Good quality vanilla ice cream would work well with these but I just served them with cream. If I'd had fresh strawberries/blueberries then they would have made a great pairing. I urge you to try this - delicious and so simple!

    Ive made this 5 times since january, everyone loves it. Im making it today for my mother in law its her favorite! I prefer to use less lemon juice than receipe suggests, about 50-75ml as it was a bit to sharp ( and i love lemons ) apart from that cant fault it. It is so easy to make and everyone wonders how i get the lemon sauce layer underneath!!

    I have a very old recipe of this a bit different but still nice all the same. I even tried it with oranges for a change, that was lovely too. Not got the guts to try it with lime though.

    I made for this 6 people, so adjusted the amounts accordingly, i.e adding half again. It was delicious - so light - and the sauce was lovely - defo make again - cannot belive how tasty this was!

    I made this with lemon and orange as I did not have enough lemon and it turned out absolutely wonderful. I will certainly be making this again as my family liked it so much that they had seconds of it. It also tastes good with a dollop of vanilla ice cream.

    I made this for four people the other day, it provided four generous portions and it was really delicious! I made it with a hand mixer and it worked fine, I also made the batter before hand. Really easy to make! The pudding looked great coming out of the oven, it was warm, nice and light but was also satisfying for the pudding lovers.

    This was very nice and moist and the sauce at the bottom was lovely, however the acidity of the lemons gave me a sore throat! Other than that this recipe was lovely, and very popular.

    Big thumbs up for this recipe. Can't believe the lemon taste from just one lemon. It's such a fresh tasting dessert. Also equally nice cold the next day. This will be making an apperance again.
