Lemon self-saucing pudding

Method

  1. Heat the oven to 180C/fan 160/gas gas 4. Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter. Whisk the egg whites until firm but not stiff, and fold the two mixtures together.
  2. Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water. Bake for 45-50 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.

    I have no idea how this works but it does. A totally scrumptious pudding that you just can't stop eating! I managed with one of those hand held blender things and although it took a little while for sugar and butter to become creamy it worked fine. I could happily eat this every day!

    This was so light and lemony and very easy to make, it went down a storm! Delightful! I only used juice from one lemon, next time I will juice another to make up to full 100ml, however is was Devine with just one!

    My 9 and 12 year old boys and I have made this so many times, its so easy, light, fluffy and a great tang of lemon to it ...... A real family favourite.

    delicious!! am usually suspicious of 'self-saucing puddings'. this was the first one i made - and i *loved* it. there was no middle layer of uncooked soggy sponge mixture - just a light-as-air cake on top of zingy lemon sauce. brilliant :)

    Delicious, but the sugar can be cut drastically. I used 125g with half lemon juice, half orange juice and it was still too sweet! I reckon 100g sugar should be plenty.

    I MADE THIS LEMON SAUCY PUDDING LAST NIGHT AND IT WENT DOWN A TREAT. SO LIGHT AND LEMONY WILL DEFINITELY MAKE THIS AGAIN.

    Yum Yum!!!! Followed recipe exactly ... but it cooked much quicker for me... maybe I have a fast oven. Only took about 30-35 mins. Very lemony and light. Lush with vanilla ice cream! x

    Followed the recipe exactly and it was AMAZING - we are now addicted to this pudding and have made it a few times already. Lovely with vanilla ice cream as suggested. Now going to try the chocolate self saucing pudding which has just been added on here, hope its as nice or I will be disappointed and revert to this one again!!

    perfect perfect perfect!!!! it was easy enough to make, my butter and sugar wasn't at the creamy stage but i forged on anway and despite that the pudding came out lovely, the sponge on top light and soft and the sauce, curd is not the word to describe it more like a custard with a lemony twist. I halved the recipe and transfers the batter into to two small soufle tins. so it took 25 minutes. The hubby was impressed and ended up burning his tongue :( definitely one to make again. can't wait to try the chocolate version of this!

    I used a too large dish to cook this in but it still turned out fine. It is so delicious, and a recipe I'll use again. Was worried that my egg whites weren't firm enough, but when I tipped bowl upside down and they didn't fall out, I knew they were ready! Please give this a go if you are a 'cake virgin' as it is pretty straightforward, but tastes fab.
