Lemon self-saucing pudding

Method

  1. Heat the oven to 180C/fan 160/gas gas 4. Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter. Whisk the egg whites until firm but not stiff, and fold the two mixtures together.
  2. Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water. Bake for 45-50 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.

    I tried this for the first time at the weekend. I wasn't overly impressed with it, neither were my family. I would prefer a lemon meringue or a good lemon tart. I'm not in a rush to make it again...

    OMG!!!!!! This is sooooo good & I'm NOT a pudding person. defo recommend it. Not sure of the logic of doing it in a food processor, next time I'll just make it in my kenwood mixer :)

    At last I have found a lost childhood recipe. I am still fascinated by the way the liquid seperates during cooking to provide two delicious textures. The zingy lemon makes it perfect. I'm just going down to the supermarket to buy some more fruit........

    Very good, tasted delicious BUT a word of warning... I know my oven is hot (i.e. the temperature settings aren't accurate) however even taking this into account it needed far less (at least 10 minutes) than the stated minimum cooking time.

    Fantastic desert. I am Coeliac so substituted the plain flour for gluten free self raising flour. I used electric beaters and kept all the quantities the same. It came out perfectly. No one would guess it was gluten free. Just delicious. Thanks for another great recipe!!

    Followed the recipe but after being in the oven for 1 hour it still wasn't brown on top. We tried eating it but it wasn't nice at all, the sponge part tasted raw. The sauce was nice. I think I might try again but with the temperature at 180 C and less water in the bain marie. I also live at high altitude 1656 metres, so perhaps I need to reduce the liquid a little.

    Lovely and really simple,my ratio of sponge to sauce was half and half where as 3/4 sponge to 1/4 sauce would have made it perfect but i think that was due to adding too much water around the dish while it baked! Will be doing it again when my lemon loving mother-in-law comes to stay.

    I lost this recipe and am so glad to have found it again after a search engine search!! So delicious! Made with my niece last year and so well received. I remembered how easy it was, and made with store cupboard ingredients so wanted to make sure it was in my binder before the baby arrives in October. Will definitely be making this - totally wonderful!

    This was absolutely amazing!!! My boyfriend made it last night and we couldnt get enough! You didnt even need any cream or anything with it, it was just perfect on its own. It wasnt heavy or stodgy. Delicious!! We will definitely make it again!
