Feta baked with tomato & oregano

Cooked feta keeps its shape but becomes lovely and spreadable. Serve with warm crusty bread to scoop up the sauce

Method

  1. Heat 3 tbsp oil in a pan, add the garlic and cook for a minute. Add the chilli and tomatoes and simmer for 25 minutes until thickened. Season and stir in the oregano.
  2. Heat the oven to 200C/fan 180C/gas 6. Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes before serving.

    Very easy and tasty recipe. Using the Feta makes it quite salty so no need to season the tomato mixture before covering the feta. We had this as a lunchtime snack with a fresh crusty Baquette, some pastrami, salad & olives and it was fantastic.

    totally delicious, and too easy to make! Next time I might add more oregano or other herbs, but is great just as the recipe stands. Perfect for a summer supper

    This is so easy, it almost seems like a "cheat" to call it a recipe! It's delicious - the sweetness of cherry tomatoes balances perfectly with the sharpness of feta. It works like a dream. I am eating the leftovers with soft freshly baked bread this evening - yummy! I imagine it might also work rather well stuffed into a nice big hot jacket potato.... or baked individually on top of toasted bread/XL croutons to make hors d'oeuvres?

    Bought all the feta and then forget to take it home from work! so i used a brie, about 250g instead. It was delicious, everyone liked it including the two one year olds! I served it with fresh green beans, roasted chicken pieces (drumsticks and thighs) and 'quick carrot and walnut bread' (also on this site) and everyone loved it! Definitely a must!

    This is so delicious and easy to make. I too used goatscheese and also added some chunks of courgette, which need to par-boil first for about 3 minutes.

    I made this last night. I added it to pasta and serve with saled and crusty bread. Even my brother-in-law like it and he mouns about everyhing. He did have a little moun about having bread with it....But I was surprised. My sister and I took dog for a walk, And my hubband and brother-in-law....Had washed and dried dishes. Has he had like it and wanted to say Thanks. For pudding had made Apecot fool. Fab!!!!

    You could do so much with this recipe, but this time i just kept it simple and didn't really tweak it....apart from adding a teaspoon of honey to the tomato sauce as it was a bit sharp and bitter beforehand. It was gorgeous and a good way to use up the feta i had leftover from a salad. I just cooked butchers sausages, roasted some new pots and steamed some broccoli and it was a hit. Well done Good Food!

    I used fresh tomatoes from the fridge and put them straight in the baking dish with the feta, garlic and oregano. Then I baked it in the oven for an hour. The feta became creamy and lovely. I served it for a light lunch with Greek-type pita and told my kids it was deconstructed pizza. They loved it.

    I agree with goodgrub and SarahS - you can do so much with this recipe using it as a start (I've also chucked in peppers and onions, as well as some olives), but it's absolutely delicious as it is. Quick, easy, filling.
