Goat's cheese & red onion tarts

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Line 6 tart tins (about 10cm across) with pastry and prick the bases. Line with parchment and baking beans and bake for 10 minutes or until the pastry starts to brown, lift out the parchment and bake for another 5 minutes or until the pastry is crisp, dried and cooked.
  2. Meanwhile, slice the red onion thickly (you need 6 fat slices). Heat a little oil in a large frying pan (you may need to use 2 pans, or do it in 2 batches) and carefully fry the slices, without breaking them, on each side until they start to soften, about 15 minutes in total. Add the balsamic and thyme and bubble together.
  3. Lift a slice of onion into each tart and put a slice of goat's cheese on top, against one side of the pastry so it is off centre.
  4. Bake until the goat's cheese begins to bubble and brown a little. Drizzle with a little olive oil before serving.

    Made this last night for the starter in my dinner party, such a success I dont think you can go wrong with the combination of tastes. I also added a teaspoon of Branston Pickle just before serving which added to the flavour. Thankyou for a wonderful recipe.

    I have made these for dinner parties. I added cranberry jam on top of the goats before putting them in the oven. Turned out really lovely and all my guests wanted the recipe. Try it's taste delicious and complements both the goat cheese and red onion:/)

    Yuk - thought I'd try this, as I had been craving goats cheese and the reviews were all good. Was really disappointed with the outcome. The pastry wasn't over-cooked but, because there's no sauce, the tarts are really quite dry and boring. I don't know what I expected really - from the recipe it's clear they're just a pastry case with a bit of red onion plonked in and some melted cheese. Really not worth the effort. Next time I'll just grill the goats cheese and eat it with a little side salad, crusty bread and a drizzle of balsamic vinegar.
