Chocolate chunk pecan cookies

You can't beat American-style cookies with big chunks of chocolate and nuts. The perfect grown-up biscuit

Method

  1. Heat oven to 180C/fan 160C/gas 4. Melt 85g chocolate in the microwave on High for 1 min or over a pan of simmering water.
  2. Beat in the butter, sugars, vanilla and egg until smooth, then stir in three-quarters of both the nuts and remaining chocolate, then the flour and bicarbonate of soda.
  3. Heap 12 spoonfuls, spaced apart, on 2 baking sheets (don't spread the mixture), then poke in the reserved nuts and chocolate. Bake for 12 mins until firm, then leave to cool on the sheets. Can be stored in a tin for up to 3 days.

    Very delicious, though tastes much better with only half of sugar used. The last sentence "Can be stored in a tin for up to 3 days" is way too unrealistic - all cookies were gone in 10 minutes. : )

    So easy to make, made double choc chip and left out the nuts... they were gooey and crunchy! Everyone liked them, funnily enough someone asked me too if I was setting up in competition with millies!

    Made these this morning...there is a whole lot of chocloate in them, and you may think you'd rather just eat the chocolate...well let me tell you it is worth it!!! Yum!

    I made these with walnuts instead, and very good they are too. I'm taking them over to my hard-working boyfriend tonight - it took great restraint not to eat all of them!

    Yummy HUGE chewy cookies! Very easy to make, I made them with 85g dark chocolate and the rest in Cadbury's Dairy Milk for the chunks.

    Wow! The g&b choc bar I had was 150g and that was plenty, the bits I stick into the top just melted so I wouldn't do that again. Hope my work collegues enjoy them tomorow as much as the bairns have tonight!

    i had never been successfully baked cookies- until i tired this recipe. very easy. I adapted the recipe though. and i have to say that it taste much nicer. less sugar - only put about 70 g. less butter- half of the butter recommended i used 100 g of dark chocolate and 100 g of milk chocolate (chopped) plus 1 tsp of cinnamon.the cinnamon gives a v nice smell and taste. superb! cant wait for my flatmate to taste them!

    lovely! I would recommend using 3 baking sheets or more of poss as the cookies really pread - mine are HUGE and square. I didn't use the pecans and so used white cocolate chips instead - absolutely beautiful! The cookies look like they wrinkly but they are so tasty!

    I didn't have many of the ingredients but went ahead anyway as needed to occupy a bored 6 year old! Having made them with only 50g sugar, white choc drops and without bicarb or dark choc and nuts they are delicious (ugly - flat and too brown on the edges, but delicious!) Will definately make again.

    These biscuits went down very well at work on cake-rota Monday. They did spread out a lot on the baking tray so make sure to leave plenty of room between biscuits.

    Was soooooo excited to try these but ended up with ONE large cookie on the baking sheet and a load of cookie slop running down my oven door! They spread absolutely loads when you cook them and mine had blended into one huge mess (delicious mess though I have to say!). Did try with a smaller spoonful and more space inbetween cookies for the next batch and was much more successful...still huge but atleast my oven stayed clean and slop-free! Totally more-ish and gooey with crunchy edges. Next time they'll be perfect!

    I made these at the weekend, very very good!!! I only put 4 small spoons of mixture on my baking sheet and by the end of the cooking time they had taken over the whole sheet so beware! I cut down on the sugar too and they were still delicious!

    these were absolutely lovely. made them for a friends birthday and i was really surprised at how perfect they turned out to be. Gooey and sticky on the inside, slightly crunchy on the outside; exactly how a proper cookie should be! other cookie recipes i've tried tend to have been more spongey and generally quite disappointing but these were just the business. Next time though i would maybe put the mixture into 20 as the cookies did seem EXTREMELY large.
