  • 4 tbsp lemon curd
  • crème fraîche or ice cream, to serve


  1. Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min.

  2. Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with a dollop of crème fraîche or scoops of ice cream.

Made lemon one night, and chocolate the next - the lemon one was light in texture but needed an extra min in microwave. Chocolate pud was equally light and really delicious too. Only needed the stated 3 minutes. Would definitely make again.

I made this for our tea last night as my friend had given me a large jar of home made lemon curd and I halved the recipe as it was just the two of us, my husband wished I hadn't halved it as he said it was one of the nicest puddings he had ever eaten and I have to agree. Delicious and very light. I got everything ready earlier in the afternoon and left the bowl in the fridge and just popped in the microwave when we were ready to sit down to our main meal. I added some blueberries and served with blueberry ice cream. Heaven.

Made this last night with friends watching - one of them went outside to move her car, she came in 5 minutes later and she'd missed the whole thing! Amazingly quick and tasty. We made it again just to show her;)

Oh my, this was absolutely delicious. Very light. I also put the lemon curd in the bottom of the dish and halved the mixture as there were only 2 of us. Will definitely do again maybe with salted caramel sauce on the bottom and many other variations.

Really quick and easy, a lovely sponge. I wondered if the lemon curd would make it too sickly, but actually not, will def make again, and try the chocolate version too!! Lovely with creme fraiche.

Simply amazing. How can something so quick and simple be so delicious. 3 minutes in microwave was perfect. I made 1 plain sponge and served with a choice of warmed lemon curd or golden syrup and double cream. Great recipe, definitely a keeper.

Loved it, so easy and delicious, make sure you don't overcook the sponge in the microwave as it can be a bit dry, I am 7 months pregnant and crave puddings all the time, I would happily skip dinner and have something sweet instead so this is ideal for me, quick, easy and delicious... And my husband is spared the supermarket trip for my cravings!

This recipe is great! I've seen a few of these types of recipes and to be honest I wasn't convinced they would work. The result however was a yummy moist sponge pudding that you could easily pass off as having taken hours to prepare. I've made both the lemon and chocolate versions and both are equally delicious. The only problem is now I want to make and eat this everyday! Thanks bbc good food!

I am not a fan of stodgy puddings, but this is absolutely delicious. Lovely and light and not too filling. I made the lemon recipe the first time. Yesterday I made the basic recipe without the lemon but added ginger instead. Placed golden syrup in the bottom of the basin before adding the ginger mixture - scrummy!

Fabulous - made the chocolate version - added cocoa and a heaped teaspoon of instant coffee dissolved in a dessert spoon of hot water plus some plain chocolate chopped up. 4 mins in microwave and it was delicious.

Made this tonight for extended family. Followed the recipe but increased the quantity two-fold. Used a 9 inch square dish and cooked in microwave (full heat, 850W) for approx 6 minutes, mixing after every1 min for first three minutes. Topped with fresh-made lemon curd (, used juice and zest of three lemons) and served with creme fresh. Came out perfect, everyone enjoyed it including the 6-year old. Definitely will be maing again, very soon!

Totally fab, I mixed all the dry ingredients first, then added 2 medium size eggs, to form a beautiful smooth batter. Added golden syrup to the bowl bottom, five tblspns, then carefully put batter. 3 mins 10 secs, for a perfect finish.

Tasty quick pud! I cooked for approx 4 minutes in all, as it wasn't fully after three minutes.

I tried making a half quantity of lemon pudding and it was dry. I suppose I should have reduced the cooking time. What would be the correct time for a half quantity?
Also should I have covered it while it was cooking in the microwave?

Hi, what does it mean by "turn halfway trough" my microwave turns anyway, am I being a bit dim here? lol.

The cake should not be dry unless it has overcooked, perhaps your microwave is a higher wattage than the one the recipe was tested in, try lowering the cooking time slightly.
