Fastest-ever lemon pudding

Being short of time needn't stop you making your own pudding. This microwave-friendly sponge pudding is ready in 10 minutes and can easily be a chocolate pud too

Method

  1. Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min.
  2. Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with a dollop of crème fraîche or scoops of ice cream.

Cheat's chocolate sponge

Beat 25g cocoa powder into the sponge mix instead of the lemon zest. If you have any chocolate in the cupboard, chop 25g chocolate roughly and stir through. Microwave as before. Meanwhile, put 4 tbsp readymade chocolate sauce into a bowl. Heat through, then pour over the pudding. Serve with ice cream or double cream.

    Made this twice now. Very easy and simple to make. Goes down very nicely and does not last very long, between myself and my brother!! Find I have to leave in the microwave for an extra minute or two. And I use slightly more lemon curd than stated. A good make of lemon curd is recommended. Great pudding to make if you do not have a lot of time, or if unexpected guests turn up.

    I had no lemons and no cocoa so I used orange essence instead of vanilla and stirred in some choc chips then served with ambrosia chocolate custard cold from the fridge .... delicious, my 7 year old scrummed it up!!! fantastic recipe and obviously versatile!l

    I made the chocolate version the other night and it turned out fantastic, even using the wrong quantities....125g of everything instead of 100g! Adding a good dessert spoon of Sainsbo's Taste the Difference Valencian Orange gave it depth, plus a 200g bar of roughly chopped chocolate melted to make a lovely rich sauce. There were NO leftovers!

    We love this, it is so easy and fast, just what you need for a last minute pudding. I put the lemon curd in the bottom of the pudding bowl then put the mixture on top just, in my microwave 750w it takes about 5 mins.

    Made the chocolate version of this pudding last night, again it was great, really quick and simple. Made chocolate custard to go with it. Everyone loved it. Again in my 750w microwave it took about 5 mins.

    Made this tonight as I was fancying something sweet but easy to make and it was lovely! I put some golden syrup in the bottom of the bowl before adding the sponge mixture, I would say it took 5 mins in my microwave but it was light and fluffy, the lemon zest went well with the syrup. I will definitely be making again and I will be trying the other combo's.

    I have to say I was very sceptical, even after reading all the reviews. Well I've just made it and it's the lightest sponge I have ever tasted, will definitely be making it again, probably try it with Golden syrup next time.

    I made the chocolate version of this for pudding today. I was pleasantly surprised how light and tasty it was. Will def do this again...so fast and simple to make. I left out the vanilla essence and reduced flour by 25g due to addition of cocoa. I also put in choc chips and served with ice cream. Would serve with a choc sauce next time to make it more delish! :)

    I've made both lemon and chocolate versions of this sponge and it is delicious either way! Going to try a few variations to find my favourite. Perfect for when you are in a hurry or just in the mood for something yummy. :)

    This is a firm favourite in our household...the children are always asking for when we can have it next ! I agree with some of the previous comments about the cooking time taking a little longer than stated (800w microwave) however I keep cooking for about a minute or so beyond the time stated and use a skewer to test the sponge at regular intervals until it comes clean. I have also made it with a homemade butterscotch sauce...also a big hit !!

    This really is a great store cupboard recipe just made this but after 3 mins in the microwave I felt it needed another minute.. Took 4mins to make and another 4mins to scoff completely.

    THIS, is one of the BEST puddings EVER!!! My 12 year old made it all in one bowl today after Sunday lunch; AMAZINGLY fast and simple. We had it with creme fraiche and vanilla ice cream. We can't wait to try the chocolate one. Thanks for a great recipe.
