Method

  1. Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min.

  2. Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with a dollop of crème fraîche or scoops of ice cream.

Made this twice now. Very easy and simple to make. Goes down very nicely and does not last very long, between myself and my brother!! Find I have to leave in the microwave for an extra minute or two. And I use slightly more lemon curd than stated. A good make of lemon curd is recommended. Great pudding to make if you do not have a lot of time, or if unexpected guests turn up.

I love this recipe! Its light and fluffy and so quick to make! The only thing I would say that it took 5 minutes to cook in my microwave as its only 700w. Lovely with vanilla ice cream :)

This is one of the easiest and most delicious cake/pud ever! I take it ready to cook to my daughters ( I make 2 as there are usually6 people ) It is the most popular dessert ever !

I tried this as a last minute dessert my fiance suggested i use a microwave to cook it i laughed MICROWAVE! i tried it and it took minutes to prepare and even less to cook it AMAZING delicious zingy and very tasty will definately be trying other variations of this fantastic pudding :) needless to say my fiance was correct again!

Not being a great fan of microwave cooking, I was unsure about this recipe, but it was quick & easy to make. It cooked in minutes & was light and fluffy (I expected rubbery). Everyone enjoyed it.

made this tonight, with lemon curd in the bottom of bowl as previously suggested, very tasty. My husband even had seconds & he "doesn't do pudding", high praise indeed.

Unbelievable!!! I have never imagined that my first pudding would be so tastefull!!! The other amazing thing for me was the microwave baking!!!

I made this yesterday in my Christmas Welcome Dinner and I had appricot curd, so instead of lemon zest I used orange zest.

Made this tonight for a quick pud. I made the chocolate version, I added orange zezt to the mix and for the sauce i melted chocolate and orange juice together. it was so good. i will be making it again.
