Mint Chocolate Cheesecake

A refreshing Mint Chocolate Cheesecake using Mint Aeros that is fresh and light but will satisfy chocolate lovers!

Method

  1. Line a springform tin and grease.
  2. Melt the butter in a pan. Crush the Milk Chocolate Digestives and add to the melted Butter. Stir until the mixture has been coated by the Butter and the Chocolate has melted.
  3. Add the Digestive mixture to the tin and cover the bottom, pressing firm so the base is even and compressed. Leave to one side.
  4. In a large bowl add the Mascarpone, Icing sugar, the Mint Chocolate and the Coca powder and stir till the mixture is even. Add the crushed Aero bits so they are even throughout the mixture.
  5. Add the Mascarpone mixture to the tin, making sure the top is even. Decorate with Mint Chocolates i.e. more crushed Aeros, After Eights or melted chocolate.
  6. Place in the fridge to set and chill.

    i put in cream de la ment it makes it turn green and a few frops of mint oil instead of the drinking chocolate

    I made this cheesecake for the girls at work ,but my husband and a friend and my self polished it off, it was great, I change it a bit and used philly cheese and double cream.

    Hi Does anyone have a suggestion for n alternative to using masarpone cheese fr the filling of the cheesecake as one of my friends cant have mascarpone just now as she is pregnant. Thanks

    Hi Ive been asked to do this for a party as it went down very well when Ive made it before if I could do it on the friday and it would still be ok for the sunday as I'm quite busy over the weekend

    This was delicious! Went down well with the whole family. I used mint aero bubbles in the mixture and to decorate. Looked lovely. I'm going to try an orange version. Yum, yum!!

Ingredients

  • For the base:
  • 16 milk chocolate digestives
  • 50g of butter
  • For the Top:
  • 750g Mascarpone
  • 3 tbsp of Icing Sugar
  • 5 tbsp of Mint chocolate drinking powder (I used Options)
  • 1 tbsp of coca powder
  • 1/2 a bar of Mint Aero- Crushed
  • For Decoration:
  • Crushed Aero or other Mint chocolates i.e. After Eights.
