Hearty pasta soup

Do something different with a pack of tortellini. This filling soup is full of fibre, low fat and full of veg. The perfect lunch or supper

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

No basil - pesto will do

Can't get hold of fresh basil? If you've got a tub of pesto in the fridge, stir a spoonful into the soup just before you serve it.

Make it a bake

Ricotta & basil bake: Heat oven to 200C/fan 180C/ gas 6. Tip the pasta into a baking dish, season the tomatoes, stir in the basil, then spoon on top. In a bowl, combine the peas and beans, 250g tub ricotta and a handful grated Parmesan. Dot the mix over the pasta, scatter with more Parmesan, then bake for 20-25 mins until golden.

    I did not think I was going to like this. I made it for my husband. I don't like things without meat, I don't like veggie dishes and I certainly didn't think I would like spinach and ricotta but I have to say that this dish is DELICIOUS! I had 2 bowls! I cannot wait to make this for my veggie friends. They will love it. So easy, cheap and I will make this again and again and again. Finally I have found a nice veggie filling soup that I can make and re-heat for lunch the next day. Excellent :D

    Absolutely brilliant! Easy, healthy, cheap and most of all...tasty! Really delicious with the basil added and best eaten with a warm bread roll. I have taken to making this all the time with different sorts of pasta and it's always yummy.

    Yum! Will definitely cook again, but I will cook the veggies for longer ( I added leek and celery to the carrot and peas) cos they were a bit too crunchy for my liking. Added chilli and sugar as per suggestions.

    Quite good, didn't have ricotta/spinach tortellini so used spicy meat - it worked well. Maybe a bit too sweet, will make again!

    I made this last night, lovely, lovely tomato-ey flavour! I did however misread the ingredients and put 200g of peas in!! Far too many peas for my liking!!! a handful would have been just enough! I also added some cumin seeds (favourite) and some garlic (can't live without) and also a good dash of tabasco sauce and got the blender out too. Would most definitely make this one again, very, very tasty and yes we had it with crusty bread!

  • 1 tbsp olive oil
  • 2 carrots , chopped
  • 1 large onion , finely chopped
  • 1l vegetable stock
  • 400g can chopped tomatoes
  • 200g frozen mixed peas and beans
  • 250g pack fresh filled tortellini (we used spinach and ricotta)
  • handful of basil leaves (optional)
  • grated parmesan (or vegetarian alternative), to serve
