Hearty pasta soup

Do something different with a pack of tortellini. This filling soup is full of fibre, low fat and full of veg. The perfect lunch or supper

High in fibre, 3 of 5-a-day. Freeze before adding pasta

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

No basil - pesto will do

Can't get hold of fresh basil? If you've got a tub of pesto in the fridge, stir a spoonful into the soup just before you serve it.

Make it a bake

Ricotta & basil bake: Heat oven to 200C/fan 180C/ gas 6. Tip the pasta into a baking dish, season the tomatoes, stir in the basil, then spoon on top. In a bowl, combine the peas and beans, 250g tub ricotta and a handful grated Parmesan. Dot the mix over the pasta, scatter with more Parmesan, then bake for 20-25 mins until golden.

    I made this last night ... none of my children were very kind about it ... Bland, dull, unimaginative. If you are looking for a hearty veg soup or stew there are a lot of better choices than this one.

    Absolutey yummy soup: will make again as you could defintley ring the changes by varying the veg and the pasta.I added some garlic and sugar as tomato based sauces demand in our house!Served it with homemade bread and parmesan. My youngest son didn't like the look of it but when he tasted it he loved it!

    A perfect case of something being greater than the sum of its parts. This 'soup' totally rocks! And so easy to make. I followed the recipe pretty much to the letter only halving the amount of stock as I was only making 2 portions, but I ended up with 3 portions easily, even taking into account my greed! I also used M&S ricotta and spinach ravioli and their liquid veggie stock in a jar which I think made it nicer than using a stock cube and cheapo tortellini.

    I was quite surprised by this soup. It was really simple to make yet still so tasty! Adding the ravioli was definately the highlight for me :-) and lets not forget the fantastic calorie count!!! Definately a winner...

    This was a great way to use up a pack of tortellini I had in the freezer. I added lots of black pepper and some italian seasoning. I would have liked the broth to be a little thicker but otherwise we thoroughly enjoyed it.

    Really, really yummy. A great soup for a cold day, filling and warm. Though I added quite a lot of dried mixed spices and some Tabasco to add some flavour.

    A great recipe for a very quick, tasty and warming meal in this freezing weather. I used proscuitto and mozzarella cappeletti (like a mini tortellini), and added a sprinkle of chilli flakes to the onion and carrot and a teaspoon of sugar once the tomato and stock was added. Halved all the ingredients to serve 2, aiming to save the 2nd portion for another day, my other half having been lucky enough to escape to warmer climes with his work, but enjoyed it so much I ate both both portions in one go! Still got the other half of the pasta packet though, so will make some more for boyfriend on his return if I can manage to resist eating it myself.

    Delicious! My boyfriend and I loved it. I added courgette to the mix, which was lovely, and also added a dash of chilli powder, mixed herbs and worcestershire sauce to up the flavour of the sauce. Will be making this again!
