Hearty pasta soup

Do something different with a pack of tortellini. This filling soup is full of fibre, low fat and full of veg. The perfect lunch or supper

High in fibre, 3 of 5-a-day. Freeze before adding pasta

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

No basil - pesto will do

Can't get hold of fresh basil? If you've got a tub of pesto in the fridge, stir a spoonful into the soup just before you serve it.

Make it a bake

Ricotta & basil bake: Heat oven to 200C/fan 180C/ gas 6. Tip the pasta into a baking dish, season the tomatoes, stir in the basil, then spoon on top. In a bowl, combine the peas and beans, 250g tub ricotta and a handful grated Parmesan. Dot the mix over the pasta, scatter with more Parmesan, then bake for 20-25 mins until golden.

    I've just tried this one. Brilliant! Quick, simple and... good looking. Even my husband who 'does not do soups' enjoyed this one. Will do it again.

    great recipe and very qiuck and easy! everyong absolutly loves it I've made it 3 times alreadly and will be making it agian tonight :) the first time I made this I didn't have any beans, so I used a lonely packet of frozen soybean that I had bought but had no idea of what should do with :p Anyway it went down a treat! The only other I chnage is the tortellini, I've tried a few diffrent fillings now and it turns out fab evry singel time :D

    The soup is awesome, but Ricotta doesn't go very well with the flavor. Maybe can add some potato to balance the sour taste.

    Stunningly easy and stunningly tasty. The only addition I made to the recipe was dried Italian herbs, apart from that it was as it said on the tin. Great recipe with thumbs up from the family.

    Superb - great use for a packet of fresh pasta that i often have lurking in the fridge! Have now made it a few times - great for tea and for a filling lunch at work! Try with a variety of different pasta fillings and veg and ring the changes!

    I've made this many times - it's a quick and easy lunch or supper dish. A pinch of smoked chili flakes and a generous tablespoon of mascarpone makes it a little more luxurious. Great served with the cheesy garlic bread recipe.

    Personally I did not understand why such high ratings for this recipe. I would say it was average. A nice lunch to take to work on a cold day but not for an evening meal. On a positive note, its very low in sat fat and it fills you up so would reccomend if someone was on a diet. Just a little bland for me, maybe add some garlic or more herbs?

    great base soup recipe, easy to adapt. found using filled pasta way too stodgy so tried with a few mini pasta shapes.... much better!

    I loved this! So easy to make and the flavours are lovely. I used a spoonful of pesto to replace the basil and thought it worked really well. And the cheese is great sprinkled on top. My bf had a portion without the pesto and chesse and thought it was lacking flavour so I'd recommend adding them.
