Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.

  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

This was beautiful and a great change to your average soup. Very filling too. I used the quorn bolognese filled ravioli which made it a little healthier. Delicious!

Lovely stuff - I use whatever type of stuffed pasta and veg I have at the time, and its always delicious. A great standby when you can't think what to cook.

Really rate this soup, very easy and tasty :o)

I did not have fresh pasta so used dried pasta instead and it worked really well, also used pesto sauce instead of the fresh basil.

Recommend to anyone watching their calorie intake as it's nice and filling and keeps well in the fridge.

Superb recipe. It creates a meal out of nothing. We always have tortellini in the fridge. It's just such a quick way to create a filling meal in moments. This soup just came together so quickly and well. I added lots of pepper and every member of the family just loved it, even my two boys. Don't just sit and wonder...make it, you'll love it.

Used meat tortellini instead and tinned beans as no frozen ones. Enjoyed it with lots of parmesan and garlic bread. I will add some some chilli next time as I also feel that there is something lacking.

Delicious! My boyfriend and I loved it. I added courgette to the mix, which was lovely, and also added a dash of chilli powder, mixed herbs and worcestershire sauce to up the flavour of the sauce. Will be making this again!

A great recipe for a very quick, tasty and warming meal in this freezing weather. I used proscuitto and mozzarella cappeletti (like a mini tortellini), and added a sprinkle of chilli flakes to the onion and carrot and a teaspoon of sugar once the tomato and stock was added. Halved all the ingredients to serve 2, aiming to save the 2nd portion for another day, my other half having been lucky enough to escape to warmer climes with his work, but enjoyed it so much I ate both both portions in one go! Still got the other half of the pasta packet though, so will make some more for boyfriend on his return if I can manage to resist eating it myself.

Have made this soup several times for a weekend lunch with homemade bread. It is very easy and versatile - the ingredients can be changed according to what is available.

Really, really yummy. A great soup for a cold day, filling and warm. Though I added quite a lot of dried mixed spices and some Tabasco to add some flavour.

This was a great way to use up a pack of tortellini I had in the freezer. I added lots of black pepper and some italian seasoning. I would have liked the broth to be a little thicker but otherwise we thoroughly enjoyed it.

I was quite surprised by this soup. It was really simple to make yet still so tasty! Adding the ravioli was definately the highlight for me :-) and lets not forget the fantastic calorie count!!! Definately a winner...
