Ingredients

  • 1 tbsp olive oil
  • 2 carrots, chopped
  • 1 large onion, finely chopped
  • 1l vegetable stock
  • 400g can chopped tomatoes
  • 200g frozen mixed peas and beans
  • 250g pack fresh filled tortellini (we used spinach and ricotta)
  • handful of basil leaves (optional)
  • grated parmesan (or vegetarian alternative), to serve

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

Great recipe and very qiuck and easy! everyong absolutly loves it I've made it 3 times alreadly and will be making it agian tonight :)
The first time I made this I didn't have any beans, so I used a lonely packet of frozen soybean that I had bought but had no idea of what should do with :p Anyway it went down a treat! The only other I chnage is the tortellini, I've tried a few diffrent fillings now and it turns out fab evry singel time :D

I've just tried this one. Brilliant! Quick, simple and... good looking. Even my husband who 'does not do soups' enjoyed this one. Will do it again.

Very tasty and very healthy. I used asparagus instead of beans and peas which worked really well.

This recipe is delicious. Even my picky sister liked it. Only 5 weight watchers points a serving and extremely filling, thoroughly recommended.

this has become a store cupboard standby in our house, and has even travelled with us on holiday, we love it, and like others have adapted it with whatever veg we have

this is a lovely, healthy quick dinner could use a bit more umph though, I added some red wine. Would make again mid-week

Tasty soup but rather watery - adding lentils to bulk it up may be a good idea or reduce the amount of stock

This is an incredibly easy recipe to do. It is a very filling soup and my whole family love it!

Fantastic recipe and really filling! I've found it also works to spice up the veg with a bit of paprika, and even just using plain penne pasta :)

Absolutely delicious and the family loved it (they've asked me to make it again - very rare for a dish with no meat). I followed other people's suggestions and added chilli (chilli flakes). I also added a clove of garlic and used the pesto option. I didn't have carrots but I added celery and courgettes. I used frozen peas and frozen broad beans (I didn't have green beans). Finally, I didn't have any veg stock so I used chicken stock.

delicious and surprisingly filling! I added some chilli to give it a bit of a kick, this will definately become a household firm favourite.

I made this last night, lovely, lovely tomato-ey flavour! I did however misread the ingredients and put 200g of peas in!! Far too many peas for my liking!!! a handful would have been just enough! I also added some cumin seeds (favourite) and some garlic (can't live without) and also a good dash of tabasco sauce and got the blender out too.
Would most definitely make this one again, very, very tasty and yes we had it with crusty bread!

Quick, easy and very tasty - I added a small amount chilli sauce to give it a bit more of a kick and it was gorgeous!!

Quite good, didn't have ricotta/spinach tortellini so used spicy meat - it worked well. Maybe a bit too sweet, will make again!
