Method

  1. Heat oven to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well. Bake for 15 mins, add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender.
  2. Make four gaps in the vegetables and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking.

    I'm a bit of a dullard in the kitchen but even I managed to knock this up without too many issues (over did the eggs a bit but wasn't catastrophic). Perfect way to start a Sunday after a nice lie in!

    this is goooood i had no oregano and i served this with beans and fryed tomatoe also par boiled the potatoes and took sligthly longer would diffo make again

    so easy, i cooked and watched tv at the same time!!! but i should have put the potatoes in i bit earlier i think, a little too crunchy for me

    OOh... can't wait to try that recipe... watching my weight at the minute... will do it next sunday for brunch... see if the boy-friend finds a difference to the normal fry-up! will grill a little bacon for him on the side!

    I also par boiled the potatoes, this meal was very nice apart from the eggs which were very rubbery, next time I will poach the eggs,we had this with baked beans, good recipe.

    I think I cooked the potatoes for about 40 minutes. Also needs just a touch of seasoning after you have added the eggs.

    This is a lovely simple meal. I, too, suggest par-boiling potatoes else they take ages! The best thing about this meal though is that served with baked beans and cherry tomatoes it counts as a 'free' meal on the slimming world plan.

    Fantastic recipe. Realy tasty and so quick and easy. I used a large tray to allow plenty of room for the potatoes to cook in the time stated. Missed out the shallots though, really didn't fancy them.
