Method

  1. Heat oven to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well. Bake for bake for 40-45 mins (or until starting to go brown), add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender.

  2. Make four gaps in the vegetables and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking.

I made this for breakfast with friends and they raved about it! It took all the stress out of a fry up and I still managed to lose weight that weekend! A triumph by all accounts!
Excellent recipe and will be repeated.

(I boiled the potatoes btw for about 5-10 mins until they had just started to soften)

Cleaning up was really easy- cooking was simple and made it possible to multi-task. Great for busy mornings when you can't stand watch over a stove. The results were good and filling, if not spectacular.

As many have said, the timings on this recipe aren't quite right - add another ten minutes for the chips and five minutes for the eggs. But overall it's an unbelievably simple, extremely tasty and low fat meal. I'm watching what I eat at the minute and I still managed to shed a load of weight after eating it. In fact, I'm not sure why this isn't the standard way of cooking egg & chips!

Followed the recipe and it was very good. Great smells through the house with the Oregano. We had this for breakfast as a cheat on Fathers day, but it is much better than an all English breakfast.

Fantastic recipe. Realy tasty and so quick and easy. I used a large tray to allow plenty of room for the potatoes to cook in the time stated. Missed out the shallots though, really didn't fancy them.

This is a lovely simple meal. I, too, suggest par-boiling potatoes else they take ages! The best thing about this meal though is that served with baked beans and cherry tomatoes it counts as a 'free' meal on the slimming world plan.

I think I cooked the potatoes for about 40 minutes. Also needs just a touch of seasoning after you have added the eggs.

I also par boiled the potatoes, this meal was very nice apart from the eggs which were very rubbery, next time I will poach the eggs,we had this with baked beans, good recipe.

Took a lot longer to cook then said, so next time i will deffo par boil the potatoes. Apart from that it was lovely, we all enjoyed it.

Although i added a little more mushrooms and also some cherry tomoates found this recipe quite bland. Don't think i will be making this again.

OOh... can't wait to try that recipe... watching my weight at the minute... will do it next sunday for brunch... see if the boy-friend finds a difference to the normal fry-up! will grill a little bacon for him on the side!
