  1. Heat oven to 200C/fan 180C/gas 6. Tip the potatoes and shallots into a large, non-stick roasting tin, drizzle with the oil, sprinkle over the oregano, then mix everything together well. Bake for bake for 40-45 mins (or until starting to go brown), add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender.

  2. Make four gaps in the vegetables and crack an egg into each space. Return to the oven for 3-4 mins or until the eggs are cooked to your liking.

I enjoyed making this although it didn't look quite as good as it does in the picture;

@maggiebleksley you made me lol with the sexist bit. It's about as annoying as that's why MUMS go to Iceland but meal is great low in kcals all my lot enjoyed this add different herbs n spices to the chips to taste will Defoe be making again.

i loved this dinner. cooked it for my young children who were not too impressed although my 6 yr old did praise how perfect the eggs were lol. after reading comments i put the eggs in at the same time as the mushrooms and the timing worked. i agree the onions can go in later too. i like crispy spuds however did enjoy these. i added 2 cloves of garlic to roast for me. odd combination but i love roasted garlic and for me this worked well. sadly because kids didn't enjoy as much as me i will have this only for my winter brunches instead. highly rate this as quick simple cheap and easy :)

Quartered the ingredients as it was just for me and that seemed to help the cooking times although I did par-boil the potatoes having read the earlier comments. V tasty.

Really tasty. Again needed slightly longer for the eggs and parboiled the potatoes first, but very easy and versatile. I will definitely be making this again!

Despite the slightly sexist description, this mum loved it too! I used a large baking potato, diced it small and it cooked fine with no pre-boiling. However, the eggs took at least ten minutes to cook. After four minutes, they were still completely raw and, as I was in a hurry, I turned my fan oven up as far as it would go. Even after cooking for ten minutes, my egg white wasn't completely solid. We all enjoyed it and I would definitely do it again, but will allow much more time for the eggs next time.

Took advice from other comments and parboiled potatoes and it turned out nicely! Very cheap to make and not too unhealthy so I can see it becoming a favourite in our house! The only thing I found was that the shallots were slightly frazzled by the time everything was baked so will probably add them in later on next time!

Actually really enjoyed this, but agree with others for the timing! I parboiled my potatoes and still the probably took a good 45 minutes in the oven... I also needed longer for my eggs.. they were still translucent after 3-4 minutes, think I gave mine 6-7. But was a nice change for tea and good for veggies!

This tasted nice don't get me wrong, but the timings were all off. Even though I par-boiled the potatoes before putting them in they took an extra fifteen minutes. The eggs took closer to fifteen minutes as well. Word of advice if you're thinking about making this, add 30-40 minutes onto the cooking time so you know what you're working with. I also added a little paprika to the potatoes :).

Did not enjoy this. The eggs took far long to cook than stated, I found the oregano a bit too much ( and I put less in than stated) and the potatoes were only just cooked - wish I'd trusted my gut and parboiled them first. Oh well can't win them all!!

Ditto!! My potatoes took about 40 minutes instead and still weren't done how I like them. Definitely wish I had boiled them for a bit too. Would definitely recommend boiling first to anyone wanting to do this.

Soo good, especially after a workout. Added tomatoes and garlic, served it on top of sautéed spinach, and also drizzled with Greek yoghurt. Nom nom.
