Irish coddled pork with cider

Method

  1. Heat the butter in a casserole dish until sizzling, then fry the pork for 2-3 mins on each side until browned. Remove from the pan.
  2. Tip the bacon, carrot, potatoes and swede into the pan, then gently fry until slightly coloured. Stir in the cabbage, sit the chops back on top, add the bay leaf, then pour over the cider and stock. Cover the pan, then leave everything to gently simmer for 20 mins until the pork is cooked through and the vegetables are tender.
  3. Serve at the table spooned straight from the dish.

    I'm a veggie but I cooked this for my carnivorous husband on St Patrick's Day. The verdict: from my point of view, super-easy (and I left it cooking gently for longer than the recipe said as he was late home); from his point of view: totally delicious!!

    Made this recipe several times now and love it for it's taste and simplicity. I thought it tasted even better a day later when the cidery sauce had time to seep into the pork. Both times when I made it the supermarket didn't have swede so I used parsnips instead, and this also tasted good. One small thing I did differently was fry up the bacon along with the pork, so that they tasted a bit toasted at the end too..

    It was gorgeous. This will definitely become a regular dish. So Easy and sooooo tasty!! We were drinking the 'gravy' from our plates as we didn't want to waste a drop!

    very tasty and real handy...I doubled up to feed 5 and there was loads left over, I didn't add any potatoes as I served it with champ. Will def make again. I'll fry bacon with pork next time. Chops where lovely and moist. Delish!!

    I doubled it up and found I needed a much bigger pan than the one I had. I also found I needed more 'fluid' but that was easily done. The family liked it very much.

    I enjoyed this, I added onion and garlic and cooked the cabbage separately as I didn't fancy cabbage cooked for 20 mins!
