  I made this while on holiday in the Caribbean, using local limes! It was so easy to make and tasted absolutely wonderful, both warm and cold. It was great served with local rum & raisin ice cream and a big glass of rum punch. I'll make it again, next time using lemons to see how that turns out.

  Really easy to make, extremely limey, much better I think the day after when it has been really chilled. Very rich so only needed the tiniest portion.

  Made this for my son's 14th birthday tea 16 March, as he always requests homemade food. He has requested I make this recipe several times since, as has my 17 year old son. It is fantastic, so easy to make and not just for special occasions. If you like lemons and limes and ginger you'll love this recipe.

  I took this with me when I went to visit friends and they really enjoyed it ( I'm not eating a the moment but love to cook!) everyone had 2nds and I was only allowed a little slice to take home for my son! It smelt very limey and the biscuit base was very crisp having been baked. I haven't ever baked a biscuit base before but it made it very easy to get out of the fluted flan dish. Will make this again for sure.

  I only used three limes but wished I had gone for four. The recipe reminds me of one I made years ago called Sunshine Pie, where the juice was made up of lemons and oranges. I might try that next time.

  The base is hard to cut once it's refridgerated, but the whole thing is lovely and very easy to make. Will definitely make again. The amount of limes needed must depend on how juicy they are. I tasted it as i added.

  I LOVE this recipe.. I'm a big fan of limes and to reiterate many of the above comments you really have to be... I also added an even more decadent touch in adding some crunched up Maltesers to the base which was lovely and then added these as a wee crunchy topping as well which also looked good. I then made the mistake of adding some grated lime zest which made a good colour but was just a little too much taste-wise for me... LOVELY overall and won't last long...
