Potato, Leek and Bacon soup

An easy to make winter warmer soup with plenty of flavour, great as a starter or main course.

Method

  1. Saute the potato, leeks and bacon in a stock pot with the olive oil until soft but not coloured.
  2. Add the stock and simmer until the potatoes are tender.
  3. Liquidize and return to the pot.
  4. Add the milk and black pepper to taste.
  5. Bring back up to heat and serve.

    Fabulous! I had mislaid my usual recipie for Leek & Potato Soup so decided to give this one a go & I am so glad I did. The addition of the bacon gives it such a lovely more-ish flavour. It went down a treat with the whole family - even with my 3 year old who is such a fussy eater! Even got requests for more the next day. Will most definately be making it again.

    As above I had lost my traditional recipe that I had been given. Everyone loved this the bacon really adds to the flavour. Definately make again and again

    My first leek and potato soup. I've been wanting to do one for ages. I've seen a lot of recipes for leek and potato soup using greek yoghurt, something i never buy and so i saw this one and had everything in and gave it a pop today, and i'll never bother searching for another recipe of this soup! Was so tasty, i loved it, my little son loved it and so did partner who doesn't get as excited about homemade soups as i do! You cn't get more simpler, anybody can make it and it's so lovely! Will be making time and time again! A Fave! :)

    I make soups weekly for my family and last week made this recipe. disaster!! can someone tell me what went wrong, I followed the recipe and all seemed fine, tasted wonderful. The following day when I went to reheat, the soup appeared to have fermented and separated with a foamy top of about three inches ! and tasted bitter. All the ingredients I used were fresh. Please help.

    I make soup on a regular basis for my family, this one was good. I added half cream half milk to the recipie and it was lovley. very warminig on a day like today ( heavy snow ) just add a nice wedge of crusty homemade bread and your sorted!

    It was a delicious soup, and it's soooo easy to make!! Next time though, I should remember to put less veg cube in because the bacon is already salty.

    This, to me, is the ultimate leek and potato soup recipe! Easy, delicious, and simple enough to let the flavours of the veg shine through. I can't recommend this highly enough - give it a go!

    For Marie, I think the problem occurs due to the milk in it. Happened to me too on the third time when i saved some and reheated. Think it's one of those soups that ideally should be eaten on the day but if you do same some just omit the milk from the portions you're saving and when reheating then add the milk. Also seen on a couple of recipes, they add bicarb to stop it from separating, one on here actually, a tomato one that uses milk in it so you could try adding a hlf tsp. Hope this helps!

    A lovely light soup unlike my usual recipe. Adding the milk limits its fridge life but is essential.

    I've tried this recipe twice sticking exactly to the quantities given but I found it very salty. I used lean back bacon. Any suggestions anyone? Incidentally we always use skimmed milk and it hasn't separated on reheating

    Made this soup lots of times, tried using up leftover gammon from xmas turned out lovely! Also tried it by omitting bacon or ham and using chopped chicken this worked really well too x

    loved it, did not have any veg stock so used some ham stock left over from Christmas. Was not any soup left and there was only 3 of us. Will be making again.

  • 150g chopped smoked bacon, fat removed (unsmoked if you prefer, but smoked adds extra flavour)
