Buttermilk scones
Scones made this way are open and light in texture and very soft

Makes 10 pieces
Preperation and cooking times
- Rub together margarine and flour until it resembles bread crumbs
- Add castor sugar and mix
- Add beaten egg and a little buttermilk until mixture is ready to be handled
- If mixture is too sticky add a little more flour - if too dry add a little more buttermilk
- Turn out onto a floured surface and knead slightly - flatten with your hand or a rolling pin and use a pastry cutter. Makes roughly 10 depending on how thick or thin they are
- They dont have to look dainty as the rough texture is part of the appeal of this recipe
- Bake in a hot over 200C/fan 180C/gas 6 for 10 minutes
- Let them cool slightly and then split and fill with jam and or cream
