  • 24 slices smoked salmon
  • 6 hard-boiled eggs, cooled, shelled and sliced

  • 2 x 100g bags baby spinach
  • 12 large wraps, we used multigrain

For the mustard mayo

  • 200g light mayonnaise
  • 6 tbsp Dijon mustard
  • 1 small red onion, very finely sliced

Method

  1. Mix the mayonnaise and mustard, divide into 2 small bowls, then stir the onion into one bowl.

  2. To assemble, spread a layer of the onion mayonnaise over each wrap and add 2 slices of smoked salmon, some sliced hard-boiled egg and a generous helping of spinach to each. Roll up tightly. The wraps can be made several hours ahead and kept covered in the fridge. To serve, cut each wrap on the diagonal into 2 pieces. Serve with the extra mustard mayo for drizzling.

Found the recipe after reading about foods to eat after cycling, however not a fan of fish I swapped the Salmon for grilled chicken.

Really delicious and healthy. I chopped the eggs (as in egg mayo) and added cherry tomatoes. Recommended for super quick lunch.

These wraps have become my n.1 office lunch! Quick and easy to make and very tasty! I had to learn how to make the wraps stay closed by watching youtube videos but it's no longer a problem!

These are my favourite ever packed lunch sandwiches! Delicious, filling and easy! We make them the night before and they are still fine the next day for lunch. Highly recommended!

I tried this with surimi rolls instead of salmon and it was delicious! Still a great taste, I fully recommend it. I also made some rolls with herbs&garlic cream cheese instead of the mayo/mustard. Also yummy!

Made these for lunches in work. Apart from the trouble I had with actually creating the wrap (is there a technique??) they were very tasty!

I did enjoy these, but thought the mustard mayonnaise slightly overpowered the salmon and would use slightly less next time.
