You just can't beat a good chocolate cake, and this one is guaranteed to disappear as soon as you cut the first slice

Method

  1. Heat oven to 160C/140C fan/gas 3. Line a 22 x 22cm square tin with baking parchment. Put the chocolate, butter and sugar into a large pan with 100ml hot water and gently melt together. Set aside for 2 mins, then stir in the soured cream followed by the eggs. Finally, stir or whisk in the flour and cocoa until lump-free, then pour into the prepared tin. Bake for 50-55 mins until a skewer comes out clean. Sit the tin on a wire rack to cool.
  2. Meanwhile, make the icing. Gently melt together icing ingredients in a heatproof bowl set over a pan of barely simmering water, then chill or cool until spreadable.
  3. To decorate, carefully turn out the cooled cake and peel off the baking parchment. Spread the icing over the top and scatter with hundreds and thousands, then cut the cake into triangles or fingers before serving.

    I made this scrummy cake last week served warm with icecream was a hit with my two kids :) I would prob make less icin next time as it was extremely rich with the cake too but def a treat cake... very easy to make and i left out the sour cream and it still came out well.. enjoy :)

    Great recipe. I had no problems with this cake at all. Simple to make,topping was a dream to make. Daughter taking it to school tomorrow. Looks as though i'll have to make another one for the weekend

    Just made it today, tastes very good. I made some changes to the recipe. 5 tbsp of cocoa sounded too much, so I used only half. I made cup cakes, baked for only 20 minutes, but the top is a bit crusty, next time I'll reduce the baking time. I used white chocolate for the toping, and had to chill for about an hr to make it spreadable. The cup cakes look wonderful and tastes very good. Reducing two stars because of too much cocoa.

    Mel, it is called 'gecondenseerde melk' in Holland and most supermarkets will stock it. Have a look at the section with the coffee milk. The most common brand is Friesche Vlag and it comes in a tin.

    This is a lovely rich cake that is easy to make. I found the icing goes soft so not easy to store as i only have a small fridge. Next time i wouldn't put any spinkles on as it spoils the texture when eating it .Really great cake for a treat.

    Mmm just made mine and looks too pretty to eat. I did cut my finger on tin lid of condensed milk but other than that if i can make this one, anyone can!

    This cake was yummy and easy to make. I thought it improved after a day in the tin - it became more fudge-like in consistency. Very rich but a small piece with a cup of tea was a treat! Also ate some warmed with ice-cream and that was good too. Have already made a second one for a fundraiser coffee morning.

    brilliantly easy to make, tasted fab. used less cocoa powder as someone else suggested, and used a different ready made icing / decorated it differently as it was for a birthday cake. BUT excellent and will make again for everyday scoffing. lots of compliments from everyone who ate it.

    Not a bad cake. I thought it was rather dry but that may be me. However this is the best cake icing I have ever come across. My boys hate butter icing but they love this so I use it on everything. Works well with white chocolate too. You have to leave it in the fridge until it sets properly or it runs of the cake.

    Not dry at all, in fact beautiful moist texture, quite dense, and oh so yummy! I had to give half of mine away or I would have eaten the whole thing in a few days :-o By far the best tray bake chocolate cake I have tried. Baking again for Children in Need tomorrow.

    Cold and wet outside. Wanted a change from mince pies. Scrummy cake and took note of the comments and only added half the cocoa. I too had trouble with the icing not setting but put icing sugar in to thicken it and it was ok. Will definitely make it again so easy to make.

    wow! seriously best cake ever! i have made it 4 times now and it is brill! i put the icing in the fridge once it is made just so it isnt as runny i also put it in the fridgewhen i have put the icing on the cake it alwys gos down a treat and EVERYONE loves it

    The is another very easy and foolproof recipe. Stunning. The only thing to watch out is the sugar sprinkles are great for children but far too crunchy for me and spoil it. I would ice a pattern with white chocolate next time. I use the value chocolate from sainsburys as its 50% solids and 30p. Not dry at all - assume over cooked if dry and the icing is to die for, not like sickily butter icing. Best shared as it sits in the tin waiting to be eat constantly and the small pieces go a long way. Ideal for school fetes or other charity raising events.

    This cake was the best cake i've ever made!it tasted like hot chocolate and all my family truly loved it!Cooking it went surprisingly well (though i'm only 12) taking around 55 minutes as the recipe said.Though for the icing if you want,replace the milk with caramel(around 100ml),it makes it not to runny and it gives great flavour. Give it a go!

  • 200g plain chocolate , broken into chunks (use one with a low cocoa content - we used Waitrose plain Belgian chocolate)
  • 200g butter
  • 200g light brown muscovado sugar
  • 100ml soured cream
  • 2 eggs , beaten
  • 200g self-raising flour
  • 5 tbsp cocoa powder
  • hundreds and thousands , to decorate

  • 100g plain chocolate
  • 170g can condensed milk
  • 100g butter
