Iced coconut & lime slice with summer fruit

This no-cook dessert is served straight from the freezer, for a true taste of summer indulgence

Method

  1. Line a 900g loaf tin with enough cling film to allow you to wrap the sides over the top of the tin later on. Whisk cream with the sugar until it holds peaks. Whisk in coconut cream and the lime juice and zest until it holds its shape again. Tip into tin and smooth the top, wrap the cling film back over and place in the freezer for at least 4 hrs but preferably overnight. Can be made up to 2 weeks ahead.
  2. Before serving, toss all the fruit with the sugar and the lime and set aside. When ready to serve, take the slice out of the freezer (don't take it out sooner as you would with most other frozen desserts). Unmould the slice onto a long, chilled platter, then use a knife dipped in very hot water to cut thick portions. Serve on chilled serving plates with the fruit spooned around.

    This actually ruined my dinner as I whisked the cream and sugar for 15 minutes with absolutely no results. Are you supposed to whisk the cream first? If so please say so.

    I have made this twice and have had no problems getting the cream to hold its shape. A quick, easy desert with lots of flavour, it's definately going in my binder.

    so easy to make and so tasty, ive made it twice and will definitely make it again! big advantage is you can make it days before, freeze it and not have to worry about it until its time to serve

    Good taste, but found that it was rock hard and very difficult to serve. I had taken it out 30 mins before serving, but think there were too many ice crystals in it. I wonder if this would be better made in an icecream maker. Good taste, will try again

    I made this the other week, had trouble with keeping the mixture to hold its shape, i whisked the cream first so it was nice a thick, but soon as i added the lime, and began to whisk again it went runny, but i still froze it , and it still turned out the same but it did take 24 hours to set properly, i think it depends on how much lime juice u use, my limes where quite big, apart from that its a tasty sweet refreshing dessert, and i will make it again,
