Method

  1. Heat the oven to 180C/fan 160C/gas 4. Line a 22cm square brownie tin with baking parchment. Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature. Whisk the eggs and sugar together until the mixture is light and fluffy.
  2. Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa. Fold this in to give a fudgy batter. Bake for 25-30 minutes or until the top is cracked but the middle just set. Cool completely, then lift out of the tin and cut.

Variations

Add any of the following to the final mix: 100g chopped white or milk chocolate chunks; 100g toasted roughly chopped hazelnuts or pecans; 2 handfuls of baby marshmallows; grated orange zest; 1 tbsp espresso coffee. Or push some raspberries into the mix when it's in the tin, or drizzle the top of the cooked brownies with melted chocolates.

    This recipe comes out perfect every time for me. It's the best brownies recipe I have tried. Have made them with walnuts and chocolate chips. They are delicious with vanilla ice cream and strawberry sauce. A bit hit with the family.

    This recipe is wonderful to make because the time stated for cooking the Brownies is exactly right. No having to worry about over cooking., Very moist and delicious to eat.

    Simply delicious! I never make things like this (as that would mean they'd be there to eat!) but I make an exception for these Brownies - they are wonderful!!!!

    I love this recipe, i am 11 and i made it with my 14 year old sister, the only problem with this recipe is the timings we had to leave it in the oven for a lot longer than the time it displayed in the recipe, i would still recommend the recipe! very yummy! p.s. I think the style of our oven didn't help! But if you have a good oven then this recipe would be perfect.

    These were amazing and I will definitely make them again. Mine sank a bit in the middle. Any suggestions? I did reduce the sugar amount and substituted it with some rice syrup!

    These beauties are so easy to make! I use a top end 70% cocoa commercial dark chocolate and use bourneville cocoa for extra bitterness, and make a lovely milk chocolate ganache to top them. Ganache as follows: If you use dairy milk (other milk chocolate brands are available!), it gives the ganache a lovely shiny finish, I think due to the vegetable oil content. Simmer 500ml double cream, just until it starts to boil, remove from heat and add 500g of milk chocolate, stir until all the chocolate has melted, allow to cool, then pop in the fridge until it sets a little and makes it spreadable. I spread this on top before cutting the brownies, then I put white chocolate shavings on top, making them triple chocolate brownies! I usually pop mine in the fridge again for a bit so the ganache can fully set, then they're good to go at room temp!

    I had high hopes for this recipe, however I was let down a little. My 10 year old daughter made it this afternoon and we used Swiss milk chocolate (all I had in the cupboard) and it was not chocolatey enough. I took on the comments posted and took it out of the oven after 30 mins, the top had cracked, however, it was still not cooked all the way through. I found the consistency a little odd too, spongy not squidgy. Maybe we will have another go!!

    This is by far the best brownies recipe I have ever tried. I followed it step by step and my brownies turned out sooo good. They are very moist which is what a good brownie should be like. However it is hard to know when they are done because even after 40 mins in the oven they were still pretty gooey. I kept them in a bit longer which I think was a mistake. When I make it again I'll take them out regardless and leave them to cool a bit.
