Method

  1. Heat the oven to 180C/fan 160C/gas 4. Line a 22cm square brownie tin with baking parchment. Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature. Whisk the eggs and sugar together until the mixture is light and fluffy.
  2. Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa. Fold this in to give a fudgy batter. Bake for 25-30 minutes or until the top is cracked but the middle just set. Cool completely, then lift out of the tin and cut.

Variations

Add any of the following to the final mix: 100g chopped white or milk chocolate chunks; 100g toasted roughly chopped hazelnuts or pecans; 2 handfuls of baby marshmallows; grated orange zest; 1 tbsp espresso coffee. Or push some raspberries into the mix when it's in the tin, or drizzle the top of the cooked brownies with melted chocolates.

    Question: When the recipe calls for dark chocolate does it mean cooking chocolate (without sugar) or just plain 70% cocoa commercial chocolate (i.e. Lindt Excellence)

    The most successful brownies I have ever made! Mine did not crack on top - I was worried they weren't cooked so I let them cook a little longer which was a bit of a mistake. I added some lindt milk choc chips just before cooking. paosinis - I used a basic lindt dark choc (in France its called noir extra fondant and is in a black packet) - the cocoa content was 52% minimum and this was perfect.

    I want to make these brownies as they look so good!. I am not that keen on baking powder does, anyone know if can I subsitute the baking powder for self raising flour?

    Mine also didn't crack so gave them an extra 5 minutes and they have ended up a little dry - but they taste good and I think they will be fab served warm with a little ice cream.

    Definitely a five star from me. Took on board the comments and made sure they came out before I thought they should ... and they were just perfect. Clairehetty, I used self raising flour and things worked out just fine.

    These tasted good but were a little dry (even though I stuck to the recommended cooking time). I found they had quite a dense, muffin- like texture, as opposed to the gooey nature of a typical brownie. The top wasn't light and crispy either. Would be nice warmed served with custard or ice cream as a desert.

    Brilliant recipe, best brownies i have ever tasted. These are best served warm as they are more 'gooey' when they have recently been cooked.

    I've made this four times now, it's come out perfectly every time.. my friends agree they are the best they've had, especially if they're a bit gooey in the middle still

    I followed Nigella's suggestion and broke up some extra chocolate (I used half a bar of galaxy bubbles on offer in tesco!!) into the mixture and it makes them even more chocolatey!!

    Yum Yum I have tried a few recipes for Brownies and this was the best, they were rich, choclatey and moist and more like a cake than the others I have tried. I put some marshmallows in as an extra treat. I made then for my daughters team in work. They went down a storm, only thing is I keep getting requests for more.

    Tried this recipe today. All was going well till I put them in my oven! I took out after 25 mins (as didn't want them dry) as the recipe says to only find them completely uncooked in the centre when I tried to turn them out. The edges were cooked and did taste yummy. Will definitely try this again though.
