Mexican chicken stew

Bring a touch of Mexican flavour to your midweek meal with this low-fat, one-pan supper

Method

  1. Heat the oil in a medium saucepan. Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min. Stir in the sugar, chipotle paste and tomatoes. Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).
  2. Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce. Scatter with a little red onion, the coriander, and serve with remaining red onion, tortillas or rice.

IF YOU WANT TO USE A SLOW COOKER...

Cook the onion and garlic as above, then put into your slow cooker with the sugar, chipotle, tomatoes and chicken. Cover and cook on High for 2 hours. Remove the chicken and shred then serve as above.

Chipotle paste

Chipotle chillies - smoked Mexican jalapeño chillies - add an authentic smoky flavour to this stew. Chipotle paste is usually easier to find than the dried chillies.

    Lovely Dish - could find chipotle paste so I combined equal amounts of Franks Hot Sauce (available in all supermarkets) and smoked paprika. Served with rice and tortillas chips and a sprinkling of spring onions - mmmmm

    Got tinned chipotles at the Glasgow Lupe Pintos shop at the end of my street. Absolutely gorgeous - this is a regular favourite!

    Very nice, added 3 red chilli's on top of the chipotle paste, wouldn't have been spicy otherwise. No way would it feed 4 adults. Just enough for 2.

    With a few additions I really liked this. For some reason, maybe I just bought massive chicken breasts, I found once the chicken had been shredded there was barely any tomatoey goodness. So at that point I popped in another can of tomatoes and another teaspoon of chipotle paste and some hot water and it became a stew again. I also added some sweet red peppers and chorizo (so much for low fat). Really enjoyed it after that.

    Really tasty family dinner! I used chicken thigh fillets which worked really well and found the chipotle paste in Sainsbury's made by a company called Trees Can Dance. Lovely with rice, a dollop of soured cream and some corn bread and honey butter.

    Had this a while back and just came across it in the recipes again.. not sure if I left a comment last time or not...but made this and it was thumbs up all around. Really really tasty and didn't leave you feeling bloated or anything....felt healthy and tasty, which is always good. Lovely with a little rice and a salad.....

    This dish was OK, think it needed a lot more spice, didn't have chipotle paste so used harissa, maybe that was the difference. The leftover chicken and juices, I chucked in a batch of cous cous and had for my lunch the next day, which was nice.

    Very easy to make, add 2 teaspoons of chipotle paste & 1 teaspoon of chilli powder & 3 fresh chillies, if you like it spicy!

    Fantastic recipe, the chipotle paste makes a big difference, giving a smoky flavour. I used turkey breast fillets, and put it in the slow cooker for a few hours. We used it as burito filling with lettuce and sour cream. SO good!

    Tried this recipe and loved it!! After tasting I added more paste for more heat but that was a personal choice. So quick and easy. A definite 5 star recipe!! And it's low fat!! Bonus!!

    We loved this - I couldn't get the chipotle paste so used what another reviewer had suggested; a sachet of fajita seasoning (in my case Old El Paso original fajita seasoning). I also used an extra 300g of chopped tomatoes to give us more sauce. The whole thing came out very tasty, and the fact that the chicken breasts are cooked entirely in the sauce (without frying first) means they're tender and moist when shredded. Next time I will probably add some beans to the mix to add a bit of variety. We had flour tortillas with ours, using them to scoop up the stew and rice, and it made for a fun and satisfying meal.

    This was lovely. Found chipotle paste in sainsburys. I cooked a whole chicken in the oven and made the sauce separately then added the shredded chicken. Did need to up the amount of tomatoes in the sauce. Also added sliced red pepper, sundried tomatoes and a tin of kidney beans. Served on rice but with a few tortillas on top with a dollop if sour cream and home made salsa. Very simple to make and would definitely make again.

    It tasted fine, but it's just tomato and chicken with a bit of seasoning. Really easy to do in the slow cooker, but I don't think I'll be making it again.

    Just made this and i loved it!!!! So easy and quick to make! Added some chilli pasta sauce to make it a wee bit juicier. For those looking for chipotle, i got a squeezy chipotle sauce from Asda. Definitely going to make this again!! :-)

    Found the paste in Sainsburys and followed the recipe but found it a bit bland. Served it with tortillas and yoghurt. Kids liked it but would add more paste if I make it again.
