Mexican chicken stew

Bring a touch of Mexican flavour to your midweek meal with this low-fat, one-pan supper

Method

  1. Heat the oil in a medium saucepan. Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min. Stir in the sugar, chipotle paste and tomatoes. Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).
  2. Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce. Scatter with a little red onion, the coriander, and serve with remaining red onion, tortillas or rice.

IF YOU WANT TO USE A SLOW COOKER...

Cook the onion and garlic as above, then put into your slow cooker with the sugar, chipotle, tomatoes and chicken. Cover and cook on High for 2 hours. Remove the chicken and shred then serve as above.

Chipotle paste

Chipotle chillies - smoked Mexican jalapeño chillies - add an authentic smoky flavour to this stew. Chipotle paste is usually easier to find than the dried chillies.

    I couldn't find Chipotle Paste but I found Dried Chipotle chillies so I made my own paste. I rehydrated the dried chilies, chopped them up and and threw them in my mortar with some vinegar, tomato paste, cumin and coriander. Tasty times.

    Really lovely and easy recipe. I used chipotle sauce instead of paste and marinated the red onion slightly before serving.

    Delicious - really easy and works well as leftovers heated up! as per other comments I have a mild palate but upped the paste to 2 tsp and added some dried chillis - which gave a nice kick. will definately be making again.

    just made this - lovely. surprisingly spicy with just 1tsp of chipotle! think will but 2 tsps in when making for adults only though. excellent recipe

    This was really simple and tasted very good. I added some extra chilli, red pepper and celery, which needed using up. Will definatly do again as the chipotle paste is gorgeous.

    I usually love your recipes but not sure what I did wrong, just found this a bit watery, insipid and quite boring! Easy to make and such a shame, as liked the flavour just not the outcome! I made my own paste as found dried Chipotle in Tesco's soaked then passed through a sieve!

    This is a nice recipe but no way would that amount of sauce do four chicken breasts. I made the full amount of sauce and used two chicken breasts and it was only just enough for that really. Very tasty though (needs good seasoning) and I served mine with rice with sour cream and grated cheese on top. I will also try a slightly longer cooking time when I try it again as the chicken could have been more tender.

    I couldn�t find chipotle paste anywhere locally, but I did find some dried chipotle chillies from my local Tesco�s. I used three chillies, cut the stalks off and soaked them in a cup of hot water for 20 minutes. I then put the chillies and soaking liquid into my food processor and gave them a good mix. The chillies were hard to break down, so I had to remove them, chop them up by hand and throw them back in. The �chipotle water� was potent! I took a quick sniff, and it was very strong! I poured the liquid into my stew and it was perfect!!! I�m sure the paste will be more convenient, but it is surely packed full of additives, preservatives etc. I used just the dried chillies and water�..and it was work the time and effort. As I said, I bought the dried chillies from Tesco�s. They were rather pricey, but they are quite easily bought on line for the half the price! Just do a quick internet search and you�ll find them!

    Absolutely delicious! Padded it out a bit with sliced green and red peppers and a tin of red kidney beans. Also, used half a jar of the chipotle paste and 2 tins tomatoes. Everybody loved it!

    This was really yummy, I couldn't get the paste so I added a tsp of chilli powder and a tsp of smoked paprika and it worked really well and served it with wraps and sour cream.

    Too tomatoey for some tastes. The chicken breasts I used were too big, and seemed to take forever to cook through. Wont be rushing to do this again

    I basically made a combination of this and this: http://www.bbcgoodfood.com/recipes/3479/mexican-chilli-chicken so added red pepper, smoked paprika & chilli powder & chicken stock rather than chipotle paste, i also doubled the canned tomatoes and used turkey (cheaper and lower fat) - so basically changed the recipe completely but it was devine... oh, and i put in a can of black beans.... heaven.

    Found the Chipotle paste in Asda for those that can't find it. I was looking forward to this recipe but found it quite uninspiring to be honest. There was no sauce left after cooking either so although the chicken was tender, the overall texture was fairly dry (Would be fine for inside wraps, but not for rice, wedges etc. Will be looking for other recipes to use the paste with as doubt I'll be making this one again. :-(
