Mexican chicken stew

Bring a touch of Mexican flavour to your midweek meal with this low-fat, one-pan supper

Method

  1. Heat the oil in a medium saucepan. Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min. Stir in the sugar, chipotle paste and tomatoes. Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).
  2. Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce. Scatter with a little red onion, the coriander, and serve with remaining red onion, tortillas or rice.

IF YOU WANT TO USE A SLOW COOKER...

Cook the onion and garlic as above, then put into your slow cooker with the sugar, chipotle, tomatoes and chicken. Cover and cook on High for 2 hours. Remove the chicken and shred then serve as above.

Chipotle paste

Chipotle chillies - smoked Mexican jalapeño chillies - add an authentic smoky flavour to this stew. Chipotle paste is usually easier to find than the dried chillies.

    Made this today, for dinner later in the week. Didn't have any chipotle in so used chilli and smoked paprika. Also added some cumin as well, tastes lovely looking foward to having for dinner. Very easy and quick!

    Made this tonight and myself and my husband thought it was really tasty. I couldn't find the chipotle paste in Dublin but I did find Chipotle chillis in a small tin in the Food Emporium in Abbey Street (if anyone from Dublin is reading this!!). I blitzed them in a blender and used a teaspoon and kept the rest in a jar in the fridge. I will use more than a teaspoon though the next time. I was spicy at the start of cooking but wasn't as when the cooking time was over. The chicken was gorgeous and moist. I served it with boiled rice but might have it with the torilla wraps tomorrow! Hands up who loves two day dinners!!!!

    It was great! Everyone loved it! I added 2 green rocket chillies and a bit of paprika as well because we love an extra kick! The only thing was that some people said that the tomatoes were overpowering in taste, so please make sure you cook the tomatoes well.

    It was great! Everyone loved it! I added 2 green rocket chillies and a bit of paprika as well because we love an extra kick! The only thing was that some people said that the tomatoes were overpowering in taste, so please make sure you cook the tomatoes well.

    Made this at the weekend for a group of friends. Couldn't find the paste anywhere so used fresh red chillis and some jalapenos from a jar plus some chilli sauce. Went down a treat with everyone. One can of tomatoes isn't enough however - I had to add an extra one just to cover the chicken and I only used 3 breasts rather than 4.

    I cooked this tonight and it was really easy and yum. I got slightly worried that it would dry up and so added some water, but this made it too watery so I won't be adding it the next time! :)

    Really quick and tasty. I couldn't find the chipotle chilli so I used smoked Paprika and a couple of mild chillies instead (incidently Tesco sell dried Chipotle chillies). I served mine with homemade corn tortilla's and rice. Yum!

    Made this a few times for dinner, we all love it. I use 2 cans of tomatoes cause there doesn't seem alot with just one. I don't use brown sugar as I never have any and I use normal jalepenos chopped finely and some smokey bbq sauce! still tastes gorgeous! :)

    Really nice :) Blitzed roasted peppers and tomatoes instead of using tinned. Also used extra chipotle paste. And served with the smoky sweet potato wedges.

    We loved this recipe! Made this tonight for tea, couldn't find chipotle paste in Tesco (we don't have a Waitrose locally) so used as some other reviewers suggested dried chilli and loads of smoked paprika. We also used chicken thighs instead of breast as we prefer the taste of thigh meat. Would definitely make it again!

    Lovely recipe! I'm not usually a fan of spicy things but this is great. Couldnt find chipotle paste in the local supermarkets so on the advice of a few reviewers on here used smoked paprika instead, worked a treat. Also added some pancetta chopped up finely with the onions.Served it with rice and tortilla chips, with some sour cream dip, will definately be making this again!

    I used twice as much chipotle paste as the recipe recommends, and I found it delicious with tortillas! I wondered would people may suggest for something to bulk it out a bit. I just found that it needed an extra carbohydrate as part of the dish, maybe black eyed peas, or sweet potato?
