Miso flavoured broth with marinated tofu
Tofu makes a quick, healthy supper when used in this simple Japanese broth

Ready in 30 minutes
- Toss the tofu in the teriyaki marinade and leave for 15 minutes. Dissolve the miso in the vegetable stock and bring to a simmer. Add the greens, half the spring onions and the soy and simmer for 2 minutes.
- Grill the tofu for a few minutes, turning until glazed. Divide between bowls. Pour over the broth then scatter over the remaining spring onions and chillies.

- 2 tbsp miso paste
- 600ml vegetable stock
- a few leaves spring greens , shredded
- 2 spring onions , sliced
- 1 tbsp soy sauce
- 1 red chilli , sliced
