Miso flavoured broth with marinated tofu

Tofu makes a quick, healthy supper when used in this simple Japanese broth

Method

  1. Toss the tofu in the teriyaki marinade and leave for 15 minutes. Dissolve the miso in the vegetable stock and bring to a simmer. Add the greens, half the spring onions and the soy and simmer for 2 minutes.
  2. Grill the tofu for a few minutes, turning until glazed. Divide between bowls. Pour over the broth then scatter over the remaining spring onions and chillies.

    I used 2 tbsp teriyaki marinade and 3 tsp red miso paste, as 2 tbsp seems like a lot for just 600 ml of stock. I added some green veg to the soup and noodles, it was quite delicious!

    I meant to write that the teriyaki is used for the tofu to be marinated in!

    I marinated my tofu in a marinade of sugar, rice wine vinegar, dark soy sauce and oil. It was utterly delicious. The miso itself was very tasty, but I added about 2 tbsp of soy sauce. i also substitued the greens for romaine lettuce as had some in the fridge. Loved it!
