Scrambled egg, smoked trout & chive bagels
There's no need to keep scrambled eggs just for brunch, they make a pretty decent supper dish too

Ready in 15 minutes
- Toast the bagel halves. Melt the butter in a pan, then add the eggs and heat slowly, stirring until softly scrambled and creamy.
- Put 2 bagel halves onto each plate, drape over the smoked trout then pile up the scrambled egg. Scatter over the chives and serve.
