Scrambled egg, smoked trout & chive bagels

There's no need to keep scrambled eggs just for brunch, they make a pretty decent supper dish too

Method

  1. Toast the bagel halves. Melt the butter in a pan, then add the eggs and heat slowly, stirring until softly scrambled and creamy.
  2. Put 2 bagel halves onto each plate, drape over the smoked trout then pile up the scrambled egg. Scatter over the chives and serve.

    This tastes gorgeous, the ingredients really blend in together. However I used smoked salmon instead also substituted fresh chives with chives and onion mixed in cottage cheese (from sainsbury's), it was a very nice light refreshing end to my evening and really recommend it to fish or cheese lovers

  • a few chives , snipped
