West Indian chicken curry

Method

  1. Cook the onion and garlic in a tsp of oil for 5 minutes. Season, then stir in the curry powder. Cook for another minute, then add the potatoes and chicken.
  2. Pour in the coconut milk. Simmer for 10-12 minutes, then add the tomatoes and simmer for 2 minutes.
  3. Serve sprinkled with fresh coriander.

    Ok but won't be making it again. It was just a bit boring. None of the delicious taste of my normal curry recipes as the only spice was curry powder.

    I'll give 4 stars for ease and speed and because my boyfriend loved it! Looked a bit too simple at first, but with the addition of an extra tbsp curry powder (Madras medium hot) and 0.5 tsp chilipowder, it turned out to be a very nice curry. Good way to use sweet potato.

    I would add more cherry tomatoes and probably a bit more curry powder (or use hot instead of mild), but otherwise - very nice! :)

    in the June issue this recipe is called West Indian chicken curry with cinnamon and tomatoes. But no mention of cinnamon in either ingredients or method. Would like to try it with the cinnamon any idea how much is required?

    I agree on the cinnamon query as this was the recipe's appeal for me -as a veggie I'll try it with Quorn pieces and more tomatoes, but the cinnamon is a poser...I'm contemplating throwing in a cinnamon stick as a first go, but unsure how much flavour would be imparted in 15mins. Still, that's probably going to be my way out of this one :)

    It was OK - my guy liked it as well (he doesn't do hot but I sneaked in a finely chopped green chilli).Oh & I did add some of Geeta's mango chutney because nothing ever fails if you do.

    I felt it was bland during cooking, however, I added more coriander, more curry powder and some chilli flakes to give it a bit of a kick. As I loathe tomatoes, I didnt bother putting them in. Recommended as was so easy to do and quick to cook.

    Cooked this for the second time now, I'm only 17 and this will be perfect for when i go to university, overall very Happy thanks, my freind doesn't usually like curry, but this recipe tansformed him :D lovely x

    after reading that this recipe may have been slightly bland i decided to add some slightly crushed mustard and corriander seeds at the onion frying stage. kept everything else as the recipe. first test taste is lovely.

    Just made this tonight! Added 1 tbsp cumin and 1 tbsp cayenne pepper to the curry powder to give it a bit of oompth! Lovely! The sweet potato tasted great!
