Wasabi salmon with cucumber salad

There's a bit of heat to this salmon dish, but without raising the calorie content

Method

  1. Rub both sides of the salmon with a tiny bit of oil, and then the wasabi paste.
  2. Split the cucumber in half lenthways and deseed. Cut into large diagonal chunks and put in a bowl. Add the chilli, rice vinegar, salt, sugar, poppyseeds and a bit of pepper. Mix well until the sugar and salt have dissolved.
  3. Grill the fish for 5-6 minutes depending on the thickness. Serve with the salad and some steamed rice.

    Really nice flavour We used frozen salmon steaks but the wasabi paste did not rub in very well, as we thought!! We also served it with the delicious speedy soy spinach

    The salmon had a lovely crispy top and the middle was still soft. I added some garlic granules on the top as well. We both loved it and will make again. I used the soy spinach recipe but added some bean sprouts as they needed to be used. Grated ginger was a nice touch as well. ;)

    Well, mine didn't look quite like the picture... The cucumber salad worked well with the hot salmon, but the salmon itself wasn't that special. Would make again but mainly to use up the wasabi!

    I used wasabi powder that I already had at home which you make up in one part powder and two parts water and it is a bit runnier than a paste. I didn't want to increase the quantity of wasabi as it is rather strong so I based my salmon in the liquid instead. I served it with the cucumber salad and wild rice and the whole thing was scrummy! A definite keeper!!

  • 1 tbsp wasabi paste
