Green masala prawns

A simple, yet smart Indian supper, this curry takes less time to make than ordering from a takeaway

Method

  1. Whizz all the ingredients for the masala mix in a food processor with a splash of water until smooth. Heat a tbsp of oil in a pan. Add the onions and a big pinch of salt and cook until golden. Add the masala mix and cook for a few minutes until fragrant. Add a splash of water then simmer for 10 minutes. add the prawns and cook for a couple of minutes until pink.
  2. Serve with steamed basmati rice.

    Sounds yummy. Will give it a go. One query though...can see red chillies on the pic, but not on ingredient list...is this just a trick for the food photography?

    I made this dish last night, was easy to prepare, the smell of it cooking was fantastic, but i found it a little dry. I like my Indian with a sauce that i can mop up with my naan. Maybe i should've added more water, but recipe does say a splash...how much is a splash? Obviously my splash was too small.The picture looks like it has a good sauce, mine did not look like that... I didn't have any ground coriander on hand so i just added extra fresh coriander..

    Made this last night and was really disappointed. The masala mix smelt lovely after making it but the dish as a whole lacked something despite all the ingredients, but I couldn't figure out what. I agree with the comment above, it was quite a dry curry and looked nothing like the picture despite following the recipe exactly. Not the worst meal I've tasted but wouldn't make again.

    Didn't 'whizz' anything - clearly water required (would have used yogurt if had) - bit of mango chutney.Actually it was v pleasant.

    Made this last night, did used quite big splashes of water to avoid it being too dry - you could try adding some yogurt of coconut milk for extra liquid. Lovely fresh taste.

    Substitute the splash of water with a very generous splash of dry white wine and a tablespoon of Thai Fish Sauce. I added coconut cream just before serving to make it a bit more sauce. Fabulous!

    Thanks to the comments above, added 300ml of coconut milk which produced a fantastic fresh, saucy curry. Would have been five stars otherwise, as the flavours in the herb masala are great. Also added some peas to up the veg content.

Ingredients

  • groundnut oil
  • 1 onion , halved and sliced
  • 200g raw prawns
  • 150g basmati rice , steamed , to serve

FOR THE MASALA MIX

  • small bunch coriander , leaves only
  • small bunch mint , leaves only
  • large chunk ginger , peeled and roughly chopped
  • 2 garlic cloves , peeled and roughly chopped
  • 1 small onion , peeled and roughly chopped
  • 2 green chillies , roughly chopped
  • 2 cloves , ground
  • ½ tsp ground cinnamon
  • ½ tsp ground coriander
  • ½ tsp ground cumin
