Spiced tomato & couscous soup

Couscous and harissa are a great pairing in this good-value soup

Method

  1. Heat 1 tbsp oil in a large pan and cook the onion, carrot and celery for a few minutes until softened. Add the harissa and cumin and stir. Tip in all the other ingredients except the couscous and stir well, then cover and simmer for 30 minutes. Add the couscous and simmer for another 5 minutes.
  2. Stir in the parsley before serving.

    Very tasty, a big hit - I have made this without the cous cous too! I used Sainsburys Harissa paste which wasn't too hot just made this very tasty!

    Really enjoyed this recipe, it was easy to prepare, chunky and warming and the flavours tasted really fresh. We arent vegan or even vegetarian but this is absolutely one to try. We will def be making this again.

    I made this to take to work as part of a "healthy January" campaign. It didn't look particularly appetising but I have to say that it tasted delicious and filled me up - all for under 200 cals!! Would make again.

    Made this for lunch today and it is really tasty. 3tbsps of Harrisa is essentially a whole jar so this soup definitely has a kick! I added an extra 500 mls of water and Quinoa as I didn't have any cous cous in the cupboard. It meant the soup easily served 6 so plenty for the freezer.

    I made mine with passata rather than chopped tomatoes, I also added in 50g chorizo and 1 small chicken breast. I added in extra cous cous which gives this the consistency of stew rather than soup - love it! Wonderful flavours. This made 5 good portions

    Made this last night and it was delicious. Couldn't find Harrisa paste in the supermarket, but used a Peri Peri based hot sauce instead.

    This was so yummy!! The couscous made it even more filling but it was so flavoursome and simple to make. Didn't have any harissa but used extra cumin and wasnt a problem. Will definitely be taking this to school!

    A great week day dinner/tea for someone who doesn't have much in their cupboards. I've made this several times and only registered onto BBC Good Food so I could comment. I took out the cous cous though and oven cooked some bread. Very filling and I would recommend to anyone.Plus I'd just use 2-3 teaspoons of Harissa - tablespoons is way too much and even I can take a lot of hot food.

    Substituted Harissa for a pinch of chilli powder as I'm breastfeeding and it was delicious. Will definitely make this one again. Really healthy and hearty

    I made this tonight and it was delicious!!! So mess free too ( it's nice to make a fresh soup without blending) I didn't have the paste so used garlic chilli sauce with an extra half a teaspoon of ground cumin. A new favourite for sure!!
