Spiced tomato & couscous soup

Couscous and harissa are a great pairing in this good-value soup

Method

  1. Heat 1 tbsp oil in a large pan and cook the onion, carrot and celery for a few minutes until softened. Add the harissa and cumin and stir. Tip in all the other ingredients except the couscous and stir well, then cover and simmer for 30 minutes. Add the couscous and simmer for another 5 minutes.
  2. Stir in the parsley before serving.

    Yummy, and easy to make. I needed to put more water/stock in than it said. I also used Red Thai paste instead of buying Harissa sauce, but it tasted just as good. I found you can half the receipe or double it as expected

    I've just made this soup after reading all the positive comments and thought it was great. A really unusual taste! Even though I love spicy food, I only added 2 tsp of Harissa Paste as I just had a feeling 3 would have been too much- really glad I listened to my inner self! Also I didn't have fresh parsley, so I just sprinkled a little dried parsley as a garnish...Tasted gorgeous with fresh Parmesan too! ....more of a stew than a soup!

    Nice soup and very filling. I put more cous cous in than the recipe said because 2tbsp didn't sound like much - but I really wish I didn't. The cous cous actually goes quite far. You don't need bread with this soup to be full. 4 stars!

    Truly great! And so simple! I used suggestions from comment above and added a bit of cinnamon. I also added some chilli flakes, tomato sauce and diced and fried some smoked Polish sausage-gave it an incredible taste (no longer vegetarian though). Highly recommended recipe!

    Very very tasty indeed. We used only 2 teaspoons of harissa, which was plenty. Next time I would add a little more stock as this ended up more like a stew and not so much a soup. Anyway, totally delicious and we will definitely be making it again.

    Delicious soup, however, I think 3tbsp of harissa paste would be far too much. I added 2 tbsp and it still has a kick!
