Roast duck legs with sweet potato mash

Duck legs are a much cheaper option than duck breasts and are really easy to cook

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Put the duck legs in one layer in a large roasting tin and tuck the shallots and bay leaves around the legs. Mix the allspice with 1/2 tsp salt and sprinkle a little on each leg. Roast for 1 hour. Spoon off almost all the fat (save for roast potatoes if you like), then add the wine and return to the oven for 20 minutes to finish cooking.
  2. Meanwhile, steam or simmer the sweet potato until tender, then mash with a large knob of butter and a grating of nutmeg and season well. Put a scoop of mash on each plate and lean a duck leg up against it, spoon some shallots and sauce around it and sprinkle with parsley.

    Lovely Sunday meal. I only had Chinese 5 spice so i used that instead of allspice. I thought the sweet mash was lovely although it is quite sickly to I think I'd make less next time. Very recommended.

    Great relaxed meal. Made it with new potatoes, carrots and brussels sprouts, first boiled and then re-fried in the duck fat with rosemary and garlic. Everyone loved it, we will definitely make it again.

    I tend to roast the sweet potatoes rather than steam or boil, it gets soft enough to mash and the sugars don't get lost in the water, if it is too sickly mix with some normal potato mash

    Very easy to prep, but didn't use the allspice and so duck lacked a bit of flavour. Lovely flavoured juices though. Served with roasted veg.

    Modified the sauce by adding in 2 tbsp of caramelised red onions. Turned out really really well ! Made this recipe with carrots, sprouts and homemade Yorkshire puddings. Amazing Sunday roast!!
