Cauliflower curry

Method

  1. Fry the onions in a little oil until they start to soften, add the ginger and curry paste and fry until fragrant. Add the coconut milk, tomatoes, cauliflower and potatoes and bring to a simmer.
  2. Cook for 20-30 minutes or until the potato is cooked, then season with salt. Stir in the lemon juice and spinach and leave for 2 minutes with a lid on, but off the heat. Season and serve with naan bread and basmati rice.

    I used balti paste (which I made up myself) and I found this recipe simple, but quite tasty and was lovely with nann bread, although I don't think I would like it so much with rice!!

    This was so easy and absolutely delicious although I added the cauliflower after the potatoes as I don't like it too soft. I also served it with pilau rice. Would definitely make it again.

    I prepared this recipe for the first time tonight, and it was simply amazing! I did add (2) boneless & skinless chicken breats (in strips). The only thing I would change next time is add more curry paste, or maybe purchase a "hotter" variety...The hotter the better. 5 stars!

    I added a couple of handfuls of lentils to this recipe to thicken the sauce- it was a really tasty substantial meal enjoyed by vegetarians and carnivores alike.

    Lovely veggie curry, my potatoes took a long time to soften so would par-boil then when I make this again, other than that delicious, have it with spicy cous cous. Also used double the amount of Madras curry paste.

    Very quick and easy and extremely tasty! Didn't have any spinach but didn't matter, and used whole plum tomatoes which I mashed up a bit in the pan. Mmmmmm. Got leftovers for lunch!

    My husband is a confirmed carnivore but he loves this curry! Creamed coconut works too and also great without the potato. Definitely to be repeated.

    This is a really cheap'n'easy wee recipe with heaps of flavour - my hubby & i love our curries & this was no exception! We cooked it up for the first time last night with yummy naan bread & are looking forward to 'seconds' this evening! Will definately be a regular!

    Fantastic recipe. Definitely need to par boil potatoes first as the first time I made it I had to simmer for an hour to get the potatoes to soften, by which time the cauliflower was a mush. Would recommend a stronger curry paste as the quantities here make the recipe very mild. Also try frying some cubed Paneer cheese at same time as onions, ginger and paste to give it something extra. Yum!

    Great recipe- easy to prepare, however, the cauliflower ended up being overcooked and smashed by the time the potatoes were done. My dish didn't look like the picture! You obviously cannot put the cauliflower and potatoes in together.
