French-style chicken with peas & bacon

This creamy one-pot chicken dish is a great-value way of feeding the whole family

Method

  1. In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  2. Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  3. Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

Warm bacon & mushroom salad

Stir-fry chopped bacon rashers, button mushrooms, spring onions and halved cherry tomatoes. Add splash balsamic vinegar and tip the pan contents over a mixture of robust salad leaves.

Make it healthier

Use half the bacon, half-fat crème fraîche and skinless chicken breasts.

Bacon potato salad

Grill bacon rashers until crisp. Cool, then crumble and mix into a mayonnaise-dressed potato salad.

Cheese & bacon tortilla pizzas

Grill bacon rashers until crisp. Lightly butter flour tortillas, sprinkle with grated cheese and scatter with crumbled bacon and sliced tomatoes. Quickly grill until the cheese is melted and golden.

    A great dish if you want something quick to make after a long day. I found there wasn't enough fat from the bacon to cook the chicken so I added a little oil to prevent sticking. I served with thinly sliced, grilled potatoes. Yum!

    I made this recipe last night and it was delicious! I used free-range deboned chicken,250ml. homemade chickenbroth and 50ml. white wine.Also did thicken the sauce at the end with alittle cornflour.I served it with steamed new potatoes,wonderfull,wonderfull! Had a glass of chilled rosé and it made a great summer meal,and...easy!

    One of our all time favourites. I add asparagus (in season) or mushrooms. I omit the creme fraiche and add baby new potatoes to make a wonderful one-pot dish.

    Really tasty, but I added plain flour to thicken, and also thyme for a bit more taste. Just before adding the creme fraiche I gave the pan 2 mins of full heat to reduce as well.

    Not bad, not bad at all! Flavours are mild but mouth-watering, perfect if you're in the mood for a light dinner. I substituted the bacon for mushrooms and the crème fraîche for low-fat natural yogurt. I left out the lettuce, but the dish worked just fine.

    Love this recipe! Made it a few times now. I fry some potatoes and let them simmer with chicken. Have aslo used onion instead of spring onion and has woked well.

    This is a top recipe - easy to make and delicious. I made it for the family over Xmas - 12 of us - and everyone loved it. Served it with mash, green beans and carrots. yum. Think the next time I make it I might add some cornflour to thicken the sauce but other than that would do everything the same!

    Very tasty! As people did above, I added white wine and some thyme. Didn't find the suace too watery. I did reduce it quite a bit before i put in the cream. Had it with buttery mash. Mr Oliver gave it the thumbs up. Will cook it again!

    Really tasty, I found the sauce a bit runny (I was serving with roast potatoes) so I added some flour to thicken it up. Gorgeous!
