French-style chicken with peas & bacon

This creamy one-pot chicken dish is a great-value way of feeding the whole family

Method

  1. In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  2. Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  3. Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

Warm bacon & mushroom salad

Stir-fry chopped bacon rashers, button mushrooms, spring onions and halved cherry tomatoes. Add splash balsamic vinegar and tip the pan contents over a mixture of robust salad leaves.

Make it healthier

Use half the bacon, half-fat crème fraîche and skinless chicken breasts.

Bacon potato salad

Grill bacon rashers until crisp. Cool, then crumble and mix into a mayonnaise-dressed potato salad.

Cheese & bacon tortilla pizzas

Grill bacon rashers until crisp. Lightly butter flour tortillas, sprinkle with grated cheese and scatter with crumbled bacon and sliced tomatoes. Quickly grill until the cheese is melted and golden.

    I cooked this for my family (of 8) and everyone loved it - from toddlers to hubby. Had to use sour cream, as couldn't get hold of creme fraiche, served it with rice and it went down a treat. will definitely make this one on a regular basis - thank you x

    This is so easy and great for summer entertaining. I made it for two friends and just left it (before putting in the peas, lettuce and creme fraiche) until my friends arrived - brilliant! Served with potatoes to soak up the sauce.

    Well, i've added a dash of white wine and cut a little from the stock, not added the creme fraiche, peas and lettuce yet and can hear my husband making delighted sounds from the kitchen, so am assuming all is well. Oh and it smells good!

    Sauce thin - but didn't think that was a problem really. I served it with hot buttery, garlicy macaroni (didn't have any french noodles in). Really nice - might add mushrooms like someone suggested next time.

    I took advice from others and added a bit more cornflour. We really enjoyed this and but my suggestion is to use a good quality bacon. I think the smokeyness from the bacon adds a certain layer to the overall flavor.

    Very very tasty dish and quick to do. After reading the comments about the thickness of the sauce, i decided to toss the thighs in seasoned flour before browning them and then followed the rest of the recipe (using the other tip about slightly less peas). The sauce turned out just right and we had it with buttered jersey potatoes - SCRUMPIOUS!

    This was absolutely delicious! I did not have frozen peas at that time so used corn instead, and a bit of asparagus. The chicken was tender and moist, the sauce lovely. I liked the fact that it did not need any extra seasoning, or salt as the bacon gave it loads of flavour. We had it with boiled rice. Making again very soon.

    Made this last night for my partner and me. I used more stock as I was adding lots of veg (courgette, dwarf beans, peas). Even if I hadn't used more stock this sauce would have needed thickening, so cornflour is needed. I found it quite bland tasting, so added a a load of thyme and a good glug of white wine. Tasted far much better! Not got the wow factor that other recipes I've done have had, so will probably not add to my repertoire.

    Absolutely delicious - we'll definitely have this one again. So fresh and the chicken cooked perfectly. My boyfriend had over rice and I had over a bed of lettuce, shaved carrot and cherry toms to save on carbs. A real favourite!
