Cajun turkey wraps with sweetcorn salsa

These aromatic wraps are perfect for a relaxed meal, just put everything on the table and let everyone help themselves

Method

  1. Sprinkle the spice mix evenly over the turkey. Heat the oil in a large pan, add the turkey and fry for 4 mins on each side until cooked through. Rest for 2 mins before thinly slicing.
  2. Meanwhile, mix the sweetcorn with the chilli, lime zest and juice to make the salsa. Set aside until ready to serve.
  3. Warm the tortillas following pack instructions. To serve, assemble each wrap by spreading with a little soured cream, if liked, then pile on some sliced turkey and add a spoonful of salsa. Roll up and serve with crisp salad leaves.

    I made this on a tuesday night and was surprised at how quick it was. I was a little disappointed though as it all seemed so dry - i think it could have done with some juicy peppers and some sort of sauce. I ended up smothering mine with bbq sauce and wishing it was a fajhita! I would love to try again though as it was so quick, healthy and cheap! any suggestions welcome....

    Very easy, quick & tasty supper! I halved the recipe (with the exception of the lime juice & zest) and used fromage frais instead of sour cream, which I spread on the inside of the wrap and didn't find them dry at all. I will definitely do again when wanting a quick'n'easy snack supper.

    Made the sweetcorn salsa on its own, using fresh corn and added some diced pepper and cherry toms. The lime juice is lovely in this. Served alongside BBQ.

    Nice quick and easy dinner or lunch! Very tasty although as others have said make sure you have a sauce to line the wraps with. A nice garlic mayo drizzle is good!

    This recipe is delicious! Quick and easy like a stirfry, but so flavoursome and light. We just cut the turkey up into small pieces like you would a stir-fry and didn't bother with resting the meat. Really lovely!
