Quick courgette lasagne

This comforting midweek meal is on the table in under an hour, and it's sure to keep veggies and meat-eaters happy

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Heat 1 tbsp olive oil in a pan. Cook the courgette, garlic and chilli until soft. Add the ricotta and 2 tbsp of parmesan, season and mix well.
  2. Put a layer of the mix in the bottom of a small dish. Add a quarter of the sauce then cover with 2 sheets of lasagne. Repeat twice, ending with lasagne. Spoon over the last 1/4 of tomato sauce and sprinkle over the Parmesan. Bake for 20-30 minutes until bubbling.

    So easy and cheap. We find one serves 4 rather than 2 it says in the recipe so its good on the calories too. Only wish I had a food processor because the grating is bit tedious.

    Only had dried lasagne so blanched it first. Worked a treat. Was pushed for time with 2 small, hungry (angry!) children. They loved it and so did we. We're on a budget and this ticked all the boxes. Will def make again.

    I used feta instead of ricotta, made my own tomato sauce and added a little nutmeg to the courgette mix. Wonderful.

    Lovely-everyone finished this off with nothing but good comments. I added a layer of chorizo in the middle and was very nommage! Now a favourite.

    Very easy and a huge success with the family (all boys). I substituted the ricotta for light Philadelphia with garlic and herbs as a low fat option. Even if I had doubled the recipe, it still wouldn't have been enough!

    Love this! The whole family enjoyed it, even my children who saw the courgettes before I started and said "we're not eating anything with THOSE in!". I used dried pasta and cooked it for 35mins, it was perfect. I don't think it needed bacon at all, it tasted excellent and was so easy to make. I will definitely make this again.

    Loved this dish! My three boys fought over who was going to have the last spoonful! Replaced parmesan and ricotta with cheddar and mozzarella still fab!!! Also added onions and pointed sweet peppers before cooking courgettes - great colour. Will make this again definitely!!

    This recipe is awesome! My boys are confirmed meat eaters. im on a tight budget and am trying to increase veg too. So, I used 500g lean mince beef, beef oxo, 2 onions, large garlic bulb, 2 large courgettes, chilli flakes, oregano, Italian seasoning, basil, 1tin chopped tomatoes, purée salt & pepper and topped it with cheddar cheese. This made enough for six people and was absolutely delicious. My son was somewhat concerned at the 'grated green stuff' but when mixed with the meat mixture it was devoured and my husband (who doesn't like courgettes) even had seconds! Perfect budget meal that tastes delicious!
