Ingredients

  • olive oil
  • 2 large courgettes, grated
  • 1 clove garlic, crushed
  • a pinch of chilli flakes
  • ½ 250g tub ricotta
  • 3 tbsp parmesan (or vegetarian alternative), grated
  • 300ml jar tomato pasta sauce
  • 6 sheets fresh lasagne

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Heat 1 tbsp olive oil in a pan. Cook the courgette, garlic and chilli until soft. Add the ricotta and 2 tbsp of parmesan, season and mix well.
  2. Put a layer of the mix in the bottom of a small dish. Add a quarter of the sauce then cover with 2 sheets of lasagne. Repeat twice, ending with lasagne. Spoon over the last 1/4 of tomato sauce and sprinkle over the Parmesan. Bake for 20-30 minutes until bubbling.

Very tasty, quick and easy, had no chilli flakes so used a tomatoe sauce with chilli and mild chilli powder with courgettes.

This recipe is awesome! My boys are confirmed meat eaters. im on a tight budget and am trying to increase veg too. So, I used 500g lean mince beef, beef oxo, 2 onions, large garlic bulb, 2 large courgettes, chilli flakes, oregano, Italian seasoning, basil, 1tin chopped tomatoes, purée salt & pepper and topped it with cheddar cheese. This made enough for six people and was absolutely delicious. My son was somewhat concerned at the 'grated green stuff' but when mixed with the meat mixture it was devoured and my husband (who doesn't like courgettes) even had seconds! Perfect budget meal that tastes delicious!

Loved this dish! My three boys fought over who was going to have the last spoonful!
Replaced parmesan and ricotta with cheddar and mozzarella still fab!!!
Also added onions and pointed sweet peppers before cooking courgettes - great colour.
Will make this again definitely!!

Love this! The whole family enjoyed it, even my children who saw the courgettes before I started and said "we're not eating anything with THOSE in!". I used dried pasta and cooked it for 35mins, it was perfect. I don't think it needed bacon at all, it tasted excellent and was so easy to make. I will definitely make this again.

Very easy and a huge success with the family (all boys). I substituted the ricotta for light Philadelphia with garlic and herbs as a low fat option. Even if I had doubled the recipe, it still wouldn't have been enough!

Lovely-everyone finished this off with nothing but good comments. I added a layer of chorizo in the middle and was very nommage! Now a favourite.

I used feta instead of ricotta, made my own tomato sauce and added a little nutmeg to the courgette mix. Wonderful.

Only had dried lasagne so blanched it first. Worked a treat. Was pushed for time with 2 small, hungry (angry!) children. They loved it and so did we. We're on a budget and this ticked all the boxes. Will def make again.

So easy and cheap. We find one serves 4 rather than 2 it says in the recipe so its good on the calories too. Only wish I had a food processor because the grating is bit tedious.

So filling, no need to have meat with every meal! I made my own tomato sauce (which I make in batches and freeze) which made the lasagne taste lovely and fresh. After two servings we had leftovers and it tasted even better the next day!

This recipe was very tasty. Cubed the courgettes rather than grating them and added onions and extra garlic. Also added nutmeg to the ricotta. Instead of using pasta sauce, just used tinned chopped tomatoes and seasoned. I'll definitely be making this again!

I made this tonight for the first time for my meat loving boyfriend and he loved it. I didn't grate the courgette but cut it into chunks and added mushrooms and onions. I also added a tin of chopped tomatoes and put it over the final layer to bulk up the tomato sauce and keep it moist. Next time i think i will add a few herbs and spices for extra flavour. Absolutely delicious - looking forward to making it again.

Delicious thanks. I used a tin of tomatoes for the sauce and simmered it with garlic, salt, pepper and a little sugar before adding it to the layers. My local shop didnt have ricotta so I just used a jar of lasagne white sauce and that worked fine.

I used philidelphia in place of ricotta cheese because I couldn't get any ricotta at the time, it came out very well... perhaps add a little extra parmesan to the courgette mix to allow for this change. very tasty and simple recipe

Really tasty veggie dish. Didn't have parmesan so used cheddar instead and used homemade tomato sauce.
